Description

Prima Matera is "The Way of the Future". This revolutionary copper cookware has a special innovative ferro-magnetic bottom which makes this collection the first and only copper cookware that is induction ready. This pan is 90-Percent copper and 10-Percent stainless with a gloss polish finish. It is 2mm thick copper stainless steel. The handle is riveted ergonomic and made of cast stainless steel with a stay cool result. Copper is an extraordinary conductor of heat, particularly suited for French cooking and reducing. Copper provides perfect heat distribution not just on the bottom but up the sides as well which is perfect for delicate preparations such as sauces.

This is the most wonderful pot I have ever owned... I own some Staub too but this one is by far better... Much more uniform cooking... I make caramel and this is a must-have for anything like that. Highly recommedn if you are going to cook at high temps.

The capacity given doesn't tie in to the information on DeBuyer's own website. A 6.3 quart capacity translates to a 5.96 liter capacity, but DeBuyer lists the max capacity of the 24 cm pot as 5.4 liters. So this is really a 5.4 quart pot, not a 6.3 quart capacity. However, all the other praiseworthy features are there, construction, even heat distribution. I have to take one star off for the misleading product information. ... show more
