I've fallen in love with HexClad! This pan is so versatile - you can use it on gas, electric, or induction cooktops - and is so easy to clean by hand or in a dishwasher. Plus, you can use metal utensils with no fear of scratching. Easy care instructions are on HexClad's website, but their pans are virtually foolproof. This pan isn't cheap, but it's well made, has a good weight, and heats quickly and evenly. It's a good size for skillet meals. I didn't get a lid thinking I'd use a 12" flat lid from my old cookware set. However, the lip around the lid didn't let it sit properly on the pan so I ordered a HexClad lid for those times I needed one. Again, not cheap but I love it. ... show more

I love cast iron, but moving a large cast iron skillet full of food is getting to be too much for my wrists. I wanted something that cooked like cast iron, cleaned like nonstick and was no heavier then stainless steel. I was worried about the cost, but I caught the 14" wok on sale and I am so happy I did! Pros: 1) cooks beautiful and evenly at every temperature. 2) extremely easy to clean, including when cooking at high temperatures with sugary sauce 3) durable: I have chopped ground meat roughly with a metal spatula with no damage. Gently used steel wool with no scratching. I haven't had any need to give it hard scrub, but it seems like it would handle it just fine. 4) Oven safe up to 500 degrees! 5) light weight 6) large domed lid with glass viewing window is included with the 14" wok Limitations: 1) While the wok is dishwasher safe, realistically the 14" wok is too big for a dishwasher. But, it handwashes easily, so it doesn't matter. 2) Lid is only oven safe up to 400 degrees. 3) It's expensive. (But in my opinion, it IS worth the price.) I have only had the pan for a few weeks. This HexClad non stick wok is so pretty, stylish and very well made. Even though it’s non stick, it is recommended to use small amount of oil to season the wok before first use, and this hybrid wok will perform better and better as it continues to season. The wok heats up quickly, I cooked some dishes with this wok, only on first use, there’s area that food get stuck on the wok but after the first time the wok works better. The handle size is great, it seems strong as well. I like that the wok is not too heavy and also not too light neither. It comes with lifetime warranty from HexClad. This wok is dishwasher safe, but I have not tried placing it in dishwasher yet, only hand washing so far, so easy to clean. Overall I love this wok. ... show more

We were hesitant to purchase bc of the price, but this wok, pot, frying pan, bowl has been the best kitchen utensil purchase we’ve made in a long time. It’s gorgeous, has the perfect weight so as not to be so heavy I dread using it (like LeCreuset) and not light and flimsy like many cheap pots and pans. I absolutely love using this! I’ve been using it every day since we purchased it and bc of the craftsmanship, durability, even cooking and quick clean up we’ve decided to purchase the entire Hexclad set. My husband and I went back & forth with me wanting the 12” and him saying just get the 14”— I gave in and purchased the 14” and I’m so glad I did! I use this as a large bowl as well. It’s gorgeous, functional and truly is high quality. On a side note: we are not Gordon Ramsay fans and my husband was actually annoyed at how much we love this bc he really can’t stand him (I couldn’t care less) — but even my hubby admitted that Ramsay endorses a great product. We’re sorry we didn’t pick up the entire set during their Black Friday sale but we will purchase their largest set as soon as they go on sale again. Really can’t recommend this cookware highly enough. Fabulous! I cannot believe I’m so excited over cookware! Lol! I suddenly feel so old! But if you’re on the fence about this, I strongly recommend buying bc you’ll get a lot of use out of it and it’s a beautifully made, solid piece. ... show more

    • Best stir-fry pan I’ve owned

I have owned several kinds of woks and stir-fry pans, ranging from 14” carbon steel woks to 14” stainless steel Fissler wok to a 14” Nuwave electric induction wok to a 12” Zwilling Henckels nonstick wok. They all have their specific purpose and strengths and weaknesses. My issue was that certain foods tended to stick to carbon steel woks, most notably pan-frying chow mein noodles. Trying to flip the noodle pancake over resulted in many noodles stuck to the bottom of a carbon steel wok and burning. Results were better with rice or noodles using the nonstick Henkels wok, but that wok was easily damaged when my sister inadvertently used a metal wok spatula. But this stir-fry pan is wonderful. After seasoning it, the pan-fried chow mein noodles slid off the pan using half the amount of cooking oil I normally had to use. And I was able to use a higher flame than the medium flame I was limited to with my other fragile nonstick-coated wok, resulting in a better flavor. Cleanup was simple using a soft soapy sponge and not requiring an extended soaking period to remove any stuck food particles. A metal wok spatula is permitted with this pan, unlike my nonstick Henckels wok. The 12” size is adequate for 80% of my stir-fry dishes, with the 14 inch size more desirable for bulkier leafy greens or family size quantities of fried rice. I chose this size because of its long handle with a helper handle. The 14” size unfortunately only has the short loop handles which can become quite hot when using a high flame and therefore require mitts or handle coverings for safety. The long handle this pan has stays cool during stove top cooking. I really like this stir-fry pan and recommend it. ... show more
