I've worked in restaurants where an excellent pan gets abused because everyone uses it. This is such a pan, it will take abuse (but you won't want to do that in your kitchen!) I used it for the first time on a favorite stroganoff recipe that is challenging as the timing of the ingredients is critical to the outcome. This pan is enormous, and the cooking surface is even. This has to be me absolute favorite pan in my house thus far. Nothing sticks to it, works amazing on lower heat. The pan quality is top notch, makes my food taste amazing. The price ia a bit high, but for a forever pan it's so worth the cost.
