Please read this section before using your cookware for the first time. The information it contains will help you achieve the best possible cooking results.Enameled cast iron is a remarkable and robust material that performs well with modern requirements for food preparation and cooking. Whether you choose to stir-fry, slow-cook a casserole, sear a steak or bake a cake, there is a shape that is suitable. Cast iron performs well for either slow cooking or high-temperature searing.Cast iron can be used reliably on any heat source, including induction, and with any oven or grill. It has the ability to retain heat efficiently, which allows for use of lower heat settings in stovetop and oven cooking. On the table, a hot covered dish will keep food hot for second servings.Cast iron can also be used to keep foods cold. A chilled dish becomes an ideal cold food server on a hot summer day. It can also be placed in the freezer for food storage or advanced food preparationHigh heat temperatures should only be used for boiling water for vegetables or pasta, or for reducing the consistency of stocks or sauces. High heats should never be used to preheat a pan before lowering the heat for cooking. Cast iron retains heat so efficiently that overheating will cause food to burn or stick. The vitreous enamel surface is impermeable and therefore ideal for raw or cooked food storage, and for marinating with acidic ingredients such as wine.

  • The French are Vastly Underrated, They Do a Lot of Things Better Than We Do, Including Cast Iron Cookware!
Since I’m a Francophile this review is definitely biased. In the era of supersonic flight when the French and the Brits cooperated in building their first supersonic aircraft, I had occasion to ask some British visitors about their co-operative effort and thy responded that they like to admit to letting the French manufacture the upholstery! A definite slight! After some badgering by my wife to vacation in the Caribbean I finally relented when I learned there were topless vacationers in Martinique only to be asked by the travel agent, “Why would anyone want to go to Martinique”, another slight! We went and we enjoyed the best meals (one reason I went) and I enjoyed myself with my camera photographing the French and Italian women who were topless on our hotel beach (the second reason I went). We met a female chemist from Paris (I, too am a chemist) who spoke perfectly good English and was very sweet and accommodating in helping me with the language and taking us to her favorite restaurant on the island. So, naturally I’ve got a good impression and I also do appreciate their arrogance, being arrogant myself and that’s why I’ve bought Le Creuset cookware in the past and why I will continue doing so as long as the French keep making it. All other cast iron cookware on the market is cheap junk made in China, trying to get close to Le Creuset in quality but failing because of the overly heavy items they produce. Live it up for once in your life, buy at least one Le Creuset item in shortly you will be a devotee. ... show more

I am Indian and love Indian cooking and this dish is excellent for Indian cooking too - especially stuff like biriyanis, pilafs, mutton slow cooked gravies lie rogan josh. A great versatile option. • Classic
Love Le Crueset. Tried a Staub too, in a slightly smaller size, but it doesn't compare to Le Crueset.

  • Don’t buy
I’ve wanted one of these for years. The unfortunate issue is that there are black stains on the outside of the lid. It’s a black/tar looking stain. I can’t scrub off.

  • I'm in Love
This is one of the most care-free ways of cooking anything that needs an hour or more in the oven. I like it better than my crock-pot (that's no joke!)
