I’ve owned several ceramic nonstick pans, including GreenPan, and this one clearly exceeds them. The ceramic coating is noticeably thicker and seems applied as a single resilient layer rather than a thin film. That said, ceramic nonstick lives or dies by how you treat it, and I believe most negative reviews of pans like this come from first-time users overheating them — often on the very first use. High heat, especially in an empty pan, destroys ceramic coating invisibly: the surface looks fine, but food starts sticking. My method: never set the burner above medium-high, and only until the pan reaches cooking temperature. Then I turn it down, unless there’s enough food in the pan to absorb the heat. Three rules for years of excellent nonstick performance: (1) gentle handwashing only — no dishwasher, no harsh scrubbing; (2) silicone, wood, or other non-metal utensils; (3) never let the pan overheat. Time will tell how this coating holds up long-term, but so far the quality is evident. ... show more

I like the pan a lot, and I like it better than the usual non-stick pans. Since I received the pan roughly three weeks ago, I've used the pan several times to cook eggs and refried beans with cheese. I find it easier to clean than the usual non-stick pans. Food like the remnants of refried beans just comes off easily with a silicon spatula. What a relief! After trying various pans for the perfect small omelet pan, finally this Le Creuset shallow pan, with edges slanting slightly out and perfect non-stick surface without toxic chemicals, is perfection. I am not a great cook. This pan is great for two eggs, 2-egg omelets. As I need more cookware, I am going to spend the money for Le Creuset. Wish I had known earlier! We bought this non-stick pan to replace our old caraway and thought, why not spend more money for a more premium frying pan? I bet the quality is way better than other cheaper brands. Wow, I didn't know Le Creuset's quality is this bad. The edge of the pan started "chipping" from I assume either thermal expansion or manufacturing defect within 2 weeks. Since we bought a "premium" frying pan, we were very careful with washing it and cooking in a non-abrasive rounded wooden and silicon spatula. Yet, this did NOTHING and still started chipping. Look at the other 1 star reviews, same issue. I'll never buy anything from this brand again. I would not even bother contacting them for replacement. It's going to be the same junk quality.     • Didn’t Know How Ceramic Works Before Buying

The seller sent it out to me double boxed and nicely sealed. Opened the box and found a booklet about care and warranty, thick book in many languages. Thought it was a stupid waste of paper and waste of time to manufacture such a book for a frying pan. Flipping though the book and now I see, says it should be periodically coated with oil with paper towel, rinsed off and then dried with a paper towel. This helps freshen up or maintain the non stick feature on the coating. I would not have known. Used it once to reheat meat. Used it second time to fry eggs and one egg stuck on one very specific spot. I think it’s too new to judge and maybe that one sticking spot was coating that just wasn’t absorbent to oil just yet. Heats fast and even, better then teflon non stick version I also have. Didn’t notice any chemical odor first use however I did soap and water wash before use. ... show more
