Description

Legend has it that this beloved dessert originated in the kitchen of the Tatin sisters, who operated a hotel in the French town of Lamotte-Beuvron. While making a pie for guests, one sister mistakenly placed the prepared apples in the dish first. She decided to lay the pastry crust on top, and turn it out after it finished baking. The result was unusual, but delicious, and it became the signature dish of Hotel Tatin.

  • This Pan Solved my Tarte Tatin Problem

I've always had difficulty producing a perfect Tarte Tatin using my ancient cast iron skillet and various 'foolproof' recipes sourced from professional kitchens. This Le Creuset Tarte Tatin pan has solved those problems and I'm delighted. First, I tried the recipe in the booklet which came with the pan. It differs slightly from the traditional recipes, but it turned out a flawless tart. The caramelized apples didn't stick to the pan and the handle design really helped flipping it onto the plate. The tart was gorgeous and tasty, easily the best I've ever made. I felt satisfied and vindicated. Next, I want to try to adapt Julia's recipe to this pan. Also anxious to try the savory recipes in the booklet. As for the pan itself (mine is in Cerise), it is typical of Le Creuset's design and build quality in every regard. I'm very glad I added this pan to my Le Creuset collection and look forward to the many sweet and savory recipes I'll prepare in it. Highly recommended. ... show more

  • What a joy to cook using this pan!

Last night I made a baked omelette in this pan, and it looked fantastic. I plan a quiche next. I know it is a tarte tatin pan, but it does so many many dishes beside a specialty tatin. It fits in my Breville Smart Oven, where I've cooked several casseroles to great acclaim (my husband loves one dish meals, thank heaven). It is the FLAME color, which seems to me to have great life and depth of color. And, it is my very first LeCreuset pan.....I see there are more in my future. With food, presentation is very important, and the tatin pan aces that to perfection. The handles on the pan are unique, very comfortable to hold, and make it easy to remove the pan from the oven. Of course, being cast iron covered with enamel, the pan can sit on a burner to create a sauce, and then filled with the main recipe, go straight into the oven to bake. After it is all over, the pan cleans up with hot soapy water. I know it says it can be washed in the dishwasher, but who wants to treat such an exquisite piece of art like an ordinary item? If you like to cook but need a boost to add joy to the effort, think about adding a pan like this to your repertoire. ... show more

I needed a cast iron enameled pan with straight sides that was not too big. I wanted to make frittata in it. I found this one while surfing Amazon Le Creuset. I couldn't find it in any stores. Made my first Tatin tonight. Turned out beautifully. The pan is easily managed for it's intended purpose. It's beautiful and easy to clean. I look forward to making many more recipes. I would have liked a blue pan but the cerise (cherry red) is pretty.

This is a great pan. Try to follow Julia Childs’ recipe for tarte Tatin. As hot as the pan can get, dark caramelization is still an issue. Julia sprinkles the tart with powdered sugar and puts under the broiler to get that dark, crispy color.
