Enameled cast iron is a remarkable and robust material that performs well with modern requirements for food preparation and cooking. Whether you choose to stir-fry, slow-cook a casserole, sear a steak or bake a cake, there is a shape that is suitable. Cast iron performs well for either slow cooking or high-temperature searing. Cast iron can be used reliably on any heat source, including induction, and with any oven or grill. It has the ability to retain heat efficiently, which allows for use of lower heat settings in stovetop and oven cooking. On the table, a hot covered dish will keep food hot for second servings. Cast iron can also be used to keep foods cold. A chilled dish becomes an ideal cold food server on a hot summer day. It can also be placed in the freezer for food storage or advanced food preparation High heat temperatures should only be used for boiling water for vegetables or pasta, or for reducing the consistency of stocks or sauces. High heats should never be used to preheat a pan before lowering the heat for cooking. Cast iron retains heat so efficiently that overheating will cause food to burn or stick. The vitreous enamel surface is impermeable and therefore ideal for raw or cooked food storage, and for marinating with acidic ingredients such as wine. Cooking tips for shallow frying and sauteing: For frying and sauteing, the fat should be hot before adding food. Bring the pan and fat or oil to the correct temperature together. Oil is hot enough when there is a gentle ripple in its surface. For butter and other fats, bubbling or foaming indicates the correct temperature. If either begins smoking, or if butter begins browning, it is too hot and should be cooled slightly before proceeding. The quickest way to do this is to remove the pan from the heat source for a few moments. For longer shallow frying a mixture of oil and butter gives excellent results.

The lid seals perfectly, it is BEAUTIFUL, holds heat evenly, cleans nicely & the food was delicious. I was afraid it would be too small even though there are only two of us, but there were leftovers enough for a meal for the next day and then some. Browned 4 chicken thighs, sauteed chopped green pepper, celery and red onion, added 2 and1/4 cup water, & a box of couscous. It all fit & cooked perfectly. I scorched the bottom a bit in the center but, after the pan cooled, I let is soak 15 minutes, scrubbed a little with a plastic sponge & sprinkled on some baking soda for a final scrub & all was like new. ... show more

Like all Le Creuset pieces it’s heavy, well made, & beautiful to look at. Some reviews mentioned it was too small, I was actually pleasantly surprised to find it larger than anticipated, I included several pics, and placed it side by size with 2 quart round Dutch oven (Flame).

I read the reviews before I bought it, well since I am spending that much money I need to make sure right! I was worried that it would be too small but it is not that small. It is perfect for two people. Let me give you some examples if there are anyone out there who was worried about the size as I was. I cooked 1-cup quinoa with veggies and it still had some room, I managed to braise 6 boneless skinless thighs in it ( I seared the chicken in two batches but in the end I put all of them in it with veggies and it was perfect!) I use this almost every day, you can prepare dinner for two and there will be leftovers. For quality, it is really good! and I can tell you it is different than my other enameled dutch ovens which I bought around $40-$50. It is really worth the price. ... show more

I splurged and got this as an open box item. I have been wanting it for a while but hadn't pulled the trigger because if the cost. The only damage I found was a little roughness along a ridge on the lid. I love the smaller size. Since I cook for 1 it is perfect for me. It heats up nicely on my induction stove. Clean up is pretty easy but you do have to allow it to cool some before you put it under the water or the enamel could crack or pop off. The only downside is the weight of the pan itself without anything in it. Overall I do reccomend if you are at all used to cooking with cast iron. ... show more

I have several Le Creuset cookware pieces. They are great for keeping the moisture and tenderness in foods. I have a large 3 1/2 qt buffet pan that is heavy to lift and wash. This 1 1/2 qt size is much smaller and shallower than the 2.25 qt size too. I like this small size, as it is just the two of us, making this a compact, convenient size. It's just what I've been looking for since I had surgery and am not supposed to lift for months. It is still heavy, as it's made of cast iron inside, but not like my other pans. First I was really hesitant to shell out $200. for the 1.5 qt braiser but when I looked through some images of other, much cheaper enamel cast iron pans that were chipped and the enamel coating was flaking off I decided to invest in a good quality pan from a company with great reputation. My Le Creuset pan is beautiful, the size is just right for me and the food comes out really tasty. Cleaning it is super easy and that’s a plus for me, for sure. Now I use this pan almost every day and I love it so much I ordered another, somewhat bigger Le Creuset pan just in case. These are great for cooking. Follow the instructions, do not overheat the pan and you will be rewarded with any even heating, easy to clean pan that lasts. I use if to fry steaks, braise pork chops and make beef stew. The 1.5 quart size is just right to cook for one or two people. Be warned, this is a heavy pan, so check the weight to decide if it is for you. Also the handles can be hot, so I use silicone potholders with it. This small enameled cast iron skillet almost convinced me to replace all my other pots and pans with Le Creusets. But then I did the math and realized that I'd be out a couple of thousand dollars! So here's the thing: Figure out what you still need and consider a Le Creuset pot or pan. Yes, there are lots of copycats now but start with Le Creuset. I love this one because I can sear a small steak or bake mac and cheese for two. On top of the stove or in the oven, this is a dream. And clean up is super easy.
