  • amazing nonstick properties
I used to hate cast iron because it is so heavy and seemed difficult to care for. Then a friend turned me on to vintage cast iron (pre-1960s) that was hand made with thinner and smoother cast iron, and now I love to cook in my old Wagner Ware skillets that I look for at thrift stores. They sear and brown perfectly, and are nonstick when seasoned correctly. I love that I can start them on the stove top and then move them to an oven. When it comes to modern cast iron, it's affordable but very heavy and has a rough surface. I can't even pick up a 9" skillet with one hand if it's a post 1970's cast iron pan. EXCEPT FOR THIS LANCASTER PAN. When I saw the price, I was aghast. But then I read cooking websites, and they said Lancaster was handmade in the USA and used the old techniques to make it thinner and smoother. It truly deserves all the accolades! It's already seasoned and when I fried potatoes and then eggs (with a tad bit of oil), they didn't stick at all! Honestly, it's nonstick properties are even better than my other cast iron, and more on par with Teflon (but without all the toxic materials). This pan is pretty small. It's more appropriate for cooking for one because of the 7" size. I could fit 2-3 eggs in there, and it would work for a quiche for 1 or 2. It's also pretty expensive for such a small pan, but I do think you get what you pay for -- this pan is definitely superior to a modern Lodge with its lighter weight and nonstick properties. ... show more

  • Probably best to season it yourself prior to first use
"What do you get for a hundred-dollar skillet?", I asked myself. We have not owned this enough to see how it fares over time but I can say that in comparison to our other skillets, it is clear that more care was taken in its manufacture. The inside of the pan is very smooth with a light machined finish on the bottom and smoothly polished sides. Also, the weight of it feels very nice to hold in the hand. After the first cook in it, after a light scraping, followed by a hand wash with water and immediate drying, there was a patina on the base of the skillet and it seemed like the metal had lost its coating already. I know these are advertised as being pre-seasoned but to my inexpert eye, it seems like the initial seasoning just wasn't enough. I have recoated in a light layer of oil and put it through the oven and it seems like it's held up ok but I would just say that a reseasoning wouldn't hurt after the first few uses. And that's where I feel I have to be a bit critical. For such an expensive skillet that is advertised as being pre-seasoned, I expected to not see the seasoning come off so quickly after the first use. If you know how to take care of a cast-iron skillet, this is easily amended and, of course, the more cooking that is done in it, the better the seasoning will be. My criticisms of the initial seasoning aside, I love the size of this 7" skillet. ... show more

  • Much better than Lodge
I own many cast iron skillets. I am not crazy about Lodge because they do not finish their skillets with a smooth surface and the preseasoning isn't close to nonstick. I generally find Griswold skillets in antique stores and use those instead. Lancaster comes very close to my Griswold skillets. The preseasoning does not leave it black, but it is nonstick out of the box. I tested it by making scrambled eggs and then just wiping out the pan with a paper towel. To my surprise, the pan wiped clean! (See pictures) The eggs tasted like they were made on a Blackstone, which is a huge improvement over my everyday carbon steal pans. To further test this skillet, I cooked a 12-ounce filet mignon. The sear was perfect and the skillet retained heat as expected. If you are willing to pay for quality, Lancaster is worth every penny! The seasoning is getting darker the more I use it, and I'm sure it will perform even better as the seasoning builds. I received this product for free as part of the vine program, but if you look at my reviews, you'll see 1-star reviews for other products I received through the program.   • Nice size and weight. Average aesthetics. Way overpriced compared to other premium brands.
So this is one domain where I'm more of a connoisseur than a consumer. We have owned the basic Lodge pans from Costco for years. We still use them almost everyday. However, once we decided to transition exclusively to cast iron we upgraded to Smithey. We started with the 5.5 dutch oven and recently added the No. 11 chef skillet. Both amazing. We'll continue to add a piece on birthdays and Christmas until we round out the collection. When this Lancaster No. 4 popped up on Vine I couldn't resist adding it to the toolkit. Unfortunately, I was pretty disappointed. Unboxing a Smithey is a "Whooooooaaaaa!" experience. So satisfying. Truly high-end heirloom quality. Worth every penny. Unboxing the Lancaster was like "Meh. Why is this four times the price?" The Lancaster cooking surface is indeed more polished than a basic pan, but not nearly as polished as the Smithey line. Besides that it feels much more like the Lodge than the Smithey. It just does not look and feel high end. The shape and design is very boring (perhaps they would argue "traditional" or "classic) and the exterior finish is much more rough and pitted. It is a nice light weight for the size. And it cooks very well. For the money I personally cannot recommend it. If you like the aesthetics or have a connection to PA, I'm sure it will reward you with lifetimes of excellent outcomes. ... show more
