  • Impressive performance, amazing price point, but very faulty instructions

The media could not be loaded. This pan would have 5 stars were it not for the instructions which seem to be for a regular cast iron pan, not an enameled cast iron pan which is quite different. Putting the instructions aside for a second, I have been having a good experience cooking with this pan: * It's a good size * it's very easy to clean * it works like a dream on my induction range * nothing has stuck to it (I do use oil or butter when cooking, even on non-stick because I have never had a non-stick pan that was truly non-stick without using something. The first video I made, I had to stop because the egg literally slipped almost all the way out of the pan so quickly that I almost didn't catch it. It resulted in the broken yolk seen in the video I uploaded) * the pour spouts on both sides of the pan are a huge plus * the handle is nice to hold and it hasn't yet gotten too hot to hold except when placed in the oven for cooking * the price is amazingly low for the high quality of the pan However, even as a "seasoned" user of both cast iron and enameled cast iron pans, I was left with too many questions and feel as though I might have ruined the pan using the instructions that came with the pan. 1) There is no need to season enameled pans, so why is that suggested for this pan? Seasoning enameled pans can create a sticky, hard-to-remove coating, so I opted not to do that and cooking with the pan showed that it was perfectly "non-stick" without doing that. 2) There is also no mention of the high temperature range for the pan which some lower-end enameled pans have so I wish they had been clearer about that. 3) The cleaning instructions are for regular cast iron. I have a metal mesh "cloth" that I use to clean my cast iron pans with that I would NEVER use on my enameled pans. Also metal utensils are ok on cast iron, but definitely not ok on enameled pans. 4) I could not find any info about where this pan is made nor if the enameled coating is indeed non-toxic since the product descriptions are also for a regular cast iron pan, seasoned with oil. Bottom line: I am using this pan from my own experience using enameled cast iron cookware and not from the instructions included with the pan. It seems to be a great pan, especially for the price and Carote has been around for a while, so I feel reasonably sure that the pan will hold up nicely for some time to come. ... show more

  • Fantastic!
I'm a long-time fan of cast iron skillets, but these far surpass anything I've ever used. Scrambled eggs don't stick. Hashbrowns don't stick. I'm sold - so much more lightweight than cast iron too. Plus the wood handle means safe to touch.

I’m very familiar with the use and care of cast iron cookware. I chose this because of the size. My 6” cast iron pan is too small and the 10” is too heavy and large now that I cook for one. This 8” is perfect for cooking up two fried eggs. It’s nicely enameled over cast iron. I was surprised, however to see that the inner surface and sides are also enameled. It’s absolutely slick. Frankly, it seems like nothing sticks to this thing! I still use butter or oil - I’m not trying to cut those out of my diet and I don’t know how the pan performs without it - but I’m amazed. A properly seasoned cast iron pan is “non-stick,” but this thing is like an ice skating rink. The weight is still there but it feels lighter than I expected. I think there’s less cast iron because of the heavy coating. It’s not any thicker than my other pans, the heat conduction seems to be the same, and it’s a joy to use. It comes with pretty detailed care instructions but no instructions for seasoning. It’s ready to go right out of the box with the quick wash I’d give any new cooking or eating item. Just like traditional cast iron, do not leave it to soak and dry it completely before storing. I think the top edge of the pan may not be completely covered in enamel. It does give detailed instructions to maintain the enamel without cracking it, which seems to be a concern for the manufacturer. The pan should be heated on low for a couple of minutes before use, whereas I just pop my regular pans out and set the stove to any temperature I want. It also CANNOT handle quick temperature changes. I avoid that anyway, but they’re pretty insistent about it because it can cause damage to the enamel. It also says you shouldn’t stack the pan with others because it might damage the enamel. This is wholly impractical. I simply don’t have the space, and I don’t think a lot of people do. I just make sure I set it on top of my other pans and not sandwiched between them. I guess you should buy the one size you expect to use most often because maintaining a set of these would be a storage problem. This makes me worry about the long term use of the pan. I’ve had some of my cast iron for over 40 years and I buy it used, because new cast iron is different and less desirable. It’s possible that the person who had it before me had it for just as long, and who knows where they got it. It’s been treated well, but it’s also far from delicate. It’s an investment. People can use the cast iron their grandmothers used. It can easily outlive you and I expect mine to do exactly that. If I chip the enamel on the inner surface, how badly will that affect the pan? Will I need to discard it? I have no idea. Having said that, and since it’s impractical to wait years to leave a review, I’m giving this five stars. DO read and follow the instructions, however. It’s a joy to use, but does need special TLC. ... show more
