This is my third crepe pan, and the most expensive. With out a doubt, the best yet. The weight makes it easy to spread the batter without the pan moving too.   • Excellent crepe pan
I make crepes and pancakes for my kids a lot, and previously I had always used a French steel plan my mother bought in France in the 1960's. But the old pan is only about 8" across, really just not big enough for a full-sized crepe. I no longer use Teflon or similar non-stick coatings, due to the toxic chemicals they emit at temperatures over 500 degrees (which a frying pan can easily get to). I have several Le Creuset enameled pans and once properly seasoned they are pretty decent about not sticking, but they are a full notch below the steel pan or seasoned cast iron in terms of non-stick performance -- especially with crepes. I saw in other reviews some complaints about this pan also having sticking problems, but I have to imagine the users in question just pulled the pan out of the box and poured on the crepe batter. Which any sane cook would never do with a new cast-iron pan, enameled or not. After taking off the stickers (note to manufacturer: in the future use stickers that come off more easily!), I washed the pan with soap and water, then seasoned it lightly - heated it on the stove on high, spread a thin layer of oil over the cooking surface, turned off the heat, let the oil sit for five minutes as the pan cooled, then wiped off the excess. That was it. Later, when I made crepes for the first time, I put a little bit of oil on before cooking, and voila - perfect crepes, right from the first one, no sticking at all. The size is also great, 11.25" across, pretty much covering a 12" stove burner, which makes it a full size bigger than the other enameled crepe pans I was looking at (e.g., Le Creuset). It is a bit heavy, but any iron pan this size will be. The little wooden spatula that comes with the pan is a little silly, but with a heavier pan the batter-spreader actually comes in handy. (You do NOT want to use a metal spatula with an enameled pan, it will scratch the surface.) I also saw other negative reviews about the wood handle, but I like it. You do want to be a little careful with it, but it looks great, stays cool (no need for a pot-holder), and you shouldn't be immersing any iron pan in soapy water or putting it in the dishwasher anyway. Just go over the (cooled) pan surface with a brush and water after cooking, then wipe it dry with a paper towel. Yes, you probably wouldn't want to stick a pan with a wooden handle in a hot oven or under the broiler - but how about just using another pan if you're planning on doing this. And to the reviewer who complained after cooking a hamburger on the pan - why are you cooking a hamburger in a pan with no sides? Of course it's going to be a mess. I'd advise interested buyers to ignore the unreliable negative reviews, I am extremely happy with this pan. Highly recommend. ... show more

  • Beautiful pan, great crêpes. Great dosas (gluten-free option)
UPDATE for gluten-free folks: We use this to make Dosas. Best substitute for crêpes yet. Our friends from France had a similar French-made crepe pan that they make their crepes with. I thought I'd try this pan, especially because Staub creates such excellent cookware. It is a beautiful addition to our kitchen. It IS heavy, being cast iron. If you like to swirl the crepe batter to create your crepes, this makes maneuvering the pan hard on the wrist. This crepe pan is meant to be left on the stove top while using the included wooden spreader for the batter--the manner people from Brittany say they grew up with. We're going to get a second lighter weight crepe pan (for the tilt and swirl method) so that we can keep the crepes coming at home. If anything, just looking at this pan brings back wonderful memories of a trip to France. ... show more

  • Perfect for those who are wary of nonstick coatings

As you would expect, given the price, this is a very high-quality item. The thickness of the cast iron produces very even, consistent heating, but the trade-off, of course, is that it's very heavy. While I am able to hold the pan suspended by the handle in one hand to tilt it, while pouring batter with my other hand, to allow the batter to coat the entire cooking surface, my wife does so only with significant difficulty, due to the weight. But I don't think this is really the "right" way to use it, anyway, I believe one is supposed to use the included spreader to distribute the batter. The finish on the cast iron releases the crepe easily, almost as if it was a synthetic nonstick coating, while providing peace of mind that no nasty chemicals with names that recall your college Organic Chemistry class, will make their way into your breakfast (or desert!) ... show more

  • Once you figure it out...
Okay, so I purchased this pan a couple years ago when my husband and I were on a crepe for dinner ordering kick. I thought to myself, how hard could it be? Uhm, it was as successful as my sushi making attempts, which btw I have NOT given up on despite my abysmal failure last week. The poor pan hung on the wall, with my other seldom used pieces, until I took it down again today. First I tried using it after a quick rinse. The batter stuck. I then scrubbed, washed & dried it again and put a huge dollop of virgin coconut oil and heated it up until smoking. Cooled it, wiped the oil off and reheated the pan with no additional oil. Instead of using the silly perpendicular wood contraption to swirl the batter, I did a pour and tilt. Are they perfect circles? No, but "crawl, walk, run" comes to mind. When I cook this particular batter on a non-stick, the batter creates a giant airbubble, but on the crepe pan, it makes tiny holes. Trick is to let the batter cook long enough so that it releases from the pan. The wooden flipper thing comes in very handy. Just find the side of the crepe that is cooked and slide/jiggle it under. The batter I'm using is a bean batter, so I'm hoping a normal batter will be even easier. It's a beautiful pan, just has a learning curve is all. ... show more
