Top end cast iron pans come pre-seasoned with almost mirror smooth cooking surfaces and are relatively thin and light weight. They can cost hundreds of dollars. Lodge brand cast iron pans come pre-seasoned, and have a slightly pebbly surface consistent with the casting process. They are a bit thicker and heavier than the top end pans. This pan came with a tempered glass cover, which I have not used yet. A cast iron cover would have been even better because then you could use it as a shallow Dutch oven. In my opinion, this pan is equal to or maybe even slightly better than a Lodge pan, of which I have several. It came pre-seasoned but the directions that come with it suggest doing an additional two or three seasonings before use. That is what I did. I gave it an initial wash, then put it on the stove over low heat until the water evaporated away, then added some olive oil. Once good and hot I used a wad of paper towels to coat the inside and outside with the hot oil, then put in some good quality butter and smeared that around. I then put the pan upside down in a 350 F oven. After an hour I took it out and let it cool down a little, then put in some canola oil, smeared that around both inside and out, and put it back upside down in the 350 F oven for another hour. I turned the oven off and let it sit in there overnight. This morning I gave it a quick rinse to take out the little bits of paper towel and used the pan to make home fries, something that has a tendency to stick to pans. Between the factory seasoning and my two additional seasoning processes, the potatoes came out excellently. There was no sticking at all and they came out perfectly browned. The price of this pan is about $20 less than the comparable Lodge pan. Using cast iron requires different techniques than using your regular stainless steel or coated non-stick pans. First, they must be seasoned with oil – I prefer using two different types of oil. I have used different combinations of lard, butter, olive oil, canola oil, peanut oil, bacon grease, or vegetable oil. They all work well when you use at least two different things. Cast iron gets smoother with use because most of the time you are using metal spatulas and over time that wears a tiny bit of metal from the cooking surface. To clean cast iron, either wipe it out with a paper towel if no food is struck to the surface, or use a tiny bit of soap and warm water with a chain mail cleaner and put it over low heat to dry, then add a bit of one of the oils mentioned above and wipe it inside and out, let cool, and put away. If your pan starts to stick, or develops some rust, no big deal. Simply wash it with chain mail and re-season the pan. Cast iron, because you are using cooking oil, seems to impart additional flavor to your meals. Also, cast iron can be used stove top, in an oven, over charcoal or wood, even on or in your BBQ grill or smoker. If you are cooking on a regular basis, or want to learn to cook, I think you should have at least one cast iron cooking utensil. This pan has everything you could want. The two handles make it easy to transport – careful, they get as hot as the rest of the pan when in use – and the depth is sufficient to cook everything from breakfast eggs to stew for dinner. The cover is a nice addition as well, and my wife and I think you will like this pan as much as we do.

Cast Iron is the best kind of skillet for camping, or for everyday use. This comes preseasoned, but I recommend you preseason it after washing before first use. Heat distributes evenly throughout the pan, so your food cooks at the same temperature throughout the duration of cooking. Very heavy skillet!
