I bought this pan to replace another fajita iron I've had for a few years that I've always had trouble keeping the seasoning on. I was skeptical at first because the surface isn't really smooth but rather rough cast. After 4 applications of grape seed oil and baking at 475 for an hour and a half each time to get an initial seasoning, I'm very impressed with how well this one is holding up. I've used it several times with eggs, steaks, bacon, all the things that usually make my finish disappear. It's now one of my favorite cast iron pieces. The Cast Iron itself is five stars, the only reason I am giving four, is because the wood base is a bit small and hard to handle without burning; I will suggest increasing 1/4 of an inch and that would make it a lot better. As with all my cast iron pots - I immediately hand-wash with DAWN soap, cloth dry and I will occasionally apply a drop of vegetable oil (spread with paper towel).
