I got a chance to try this on a gas burner after many uses on my induction stove - and there's a huge difference when cooking steaks. Sadly, on the induction surface the carbon steel does not perform any better than ceramic coated steel (and it's harder to clean and maintain). This is a great skillet if you know what you're doing. I'm very accustomed to cast iron and transferred that knowledge over. I treat it exactly the same. I seasoned it 5 times and started using it. I've done salmon, fried eggs, potatoes, sautéed vegetables, cornbread, sausage, and bacon in this pan. If you know what you're doing and treat it well it is pretty nonstick.   • Poorly designed pan

The media could not be loaded. Buyer Beware! An update to my first review. After contacting the seller and explaining that I was unhappy with the product they proceeded to gaslight me saying how the curvature of the pan bottom was normal. I’ve uploaded a video of the pan so Amazon users can decide for themselves if they wish to purchase a pan that’s curved on the bottom outward against your range surface. The manufacturer claims the design you’re seeing in the video showing this type of bottom curvature is purposeful due to expansion of the steel material when in use, or as they said “totally normal”. Well it doesn’t take much research to find the OPPOSITE is true. Curvature should be slightly concave/inward against the stove as the normal position. This would make the fluids in the pan collect around the edges of the bottom like a donut and flatten when heated. This Made In pan is curved downwards and the fluids pool in the middle and is even more exaggerated when heated. The pan rocks back and forth on the cooking surface causing the fluids to generally pool toward the heavy handle side of the bottom. The pan spins easily on the cooktop and in my opinion creates a dangerous condition. When the pan is heated this warped condition is worse. But apparently this is normal? This pan is difficult to use and produces poor results in cooking. My advice is to look elsewhere with a different manufacturer. ... show more

  • Overall very good carbon steel pan for the price tag
Size: 12" Carbon Steel Frying Pan
I’m judging this pan based on controllable factors, not the inherent pros and cons of a carbon steel pan. This is a specialty item, you don’t want to cook highly acidic foods like citrus, tomatoes or wine/alcohol as it will strip the pan of the seasoning. That being said it’s still a high maintenance item requiring constant touch ups to the seasoning. Pros: Achieves great results getting a nice crust on steaks, 10/10 for searing meats in general If seasoned correctly it’s a Teflon free non-stick Excellent shape with high walls I’ve only had mine for a few weeks at the time of this review but the build quality seems very good The only real con I can think of is that it is very heavy coupled with an awkward handle (If you are cooking for yourself or 1 other person, I highly suggest getting a 10” or smaller) A tip for the newbies: Never add oil while it is cold. It will cause food to stick to the surface. Take a spoonful of water and add it to the pan to test if it’s hot enough. If it beads up and skates on the surface it’s ready for oil. This will also indicate if your pan is seasoned properly. ... show more

  • My New Favorite Go-To Pan
So, having worked in restaurants and seen carbon steel pans in high intensity action, I knew I wanted to try this. It did not disappoint. I was careful to do a few batches of bacon as my first uses to get the seasoning down really well and from there it has been amazing. The ONE thing I would say could make this pan better would be a thin base layer of aluminum for conductivity help. It does have a center zone of heat accumulation, but as I am mostly doing skillet meals in it that I stir continuously, this doesn't faze me a ton. If you were wanting to make something that just sits in the pan, like a frittata or pancake or something, you might not like the uneven heat distribution. But beyond that, I love the surface immensely and the easy clean. I love being able to use metal utensils in it. I love the lightness, how it is like cast iron but so much easier to manipulate. I use this pan daily, often multiple times a day. ... show more

  • Great sear, easy clean, well seasoned
I had ordered this, then seen some reviews that were not so positive, so I had a bit of trepidation. I shouldn't have worried. The preseasoning on the pan was solid, and it has been performing well. The first thing I tried, even without any additional seasoning, was the classic fried egg test, and it passed with frying colors (groan). Have been using it for a few weeks now, and it remains a solid performer. As with stainless skillets, the key seems to be to adequately preheat the pan before you start cooking to avoid sticking.
