  • WHAT IS PORCELAIN ENAMEL ON CAST IRON. It is glass that becomes bonded to the cast iron at high temperatures. A particulate of glass, called frit, is applied to the cast iron vessel and then baked at temperatures between 1200 and 1400 F. The glass frit melts and fuses to the cast iron, forming a bond. Porcelain enamel on cast iron is heat tolerant and impervious to water and other consumables.

This particular piece is perfect for making soups, stews, casseroles, and cobblers with superior heat retention and even heating. The vibrant enamel surface is resistant to acidic and alkaline foods. This Dutch oven is right at home on induction, ceramic, electric, and gas cooktops, even in your oven up to 500 degrees Fahrenheit. Additionally, this oven can handle colder temperatures for marinating or refrigerating foods. Like traditional cast iron cookware, porcelain enameled cookware starts out being cast in the traditional method. However, after this process, a glass particulate called "frit" is applied and the cookware is baked in ovens between 1200 and 1400 degrees Fahrenheit. This process transforms the frit into a smooth porcelain surface that is bonded to the iron. There is no exposed cast iron on the finished product, the black cooking surface and rims are transformed into matte porcelain. I've been wanting a cast iron enamel Dutch oven for awhile now. LeCruset is what I'd been looking at, but couldn't justify the price as they range anywhere from $250.00-$350.00. I'd seen the Lodge at one of their stores and was impressed with them, so I was very excited to see the color Lagoon on Amazon! It is a beautiful deep teal color. It's so nice that I leave it out. The design is nice, it cooks evenly, maintains the heat, and can also be used in the oven or placed in the fridge. It is heavy, so if you're looking for something lightweight, this isn't for you. Clean up is easy. It arrived quickly and was packaged very well. I definitely recommend this Dutch Oven if you're in the market for one. We were looking for a Dutch Oven that would retain heat evenly, could master soups, stews, and spaghetti sauces, and could brown/caramelize efficiently. This 6-quart enameled cast iron Dutch Oven does precisely that, and more. We have several pieces of non-coated cast iron, and I LOVE the way they perform, so I took a deep breath and ordered several Enameled Cast Iron pieces after my non-stick cookware stopped "non-sticking". 1. This is perfect for oven-to-table use because it's nice-looking as well as tough as nails. 2. The heat retention is fantastic; everything stays hot while you're eating. 3. The heat distribution while cooking is the best I've seen: it caramelizes onions and browns meat evenly and far more rapidly than my non-stick pans and crates a beautiful fond on the bottom which is the cook's ideal result 4. The cleanup is quick and easy, a nylon scrub pad (do NOT use anything that can scratch the surface such as Brillo or cleansers) is all that's needed. The media could not be loaded. I chose the Lodge 5 Qt. Dutch oven in ‘Midnight’ - which, is a slightly metallic black leaning hematite finish. It’s very beautiful. After many uses, the outer finish shows some patina from some residue unknowingly left on it before a 500°F oven temp for ‘no knead’ ciabatta bread, twice. That doesn’t hamper its performance. The interior is a biscuit colored enamel that matches the Lodge ‘Oyster’ 3.6 Qt. shallow braiser I also purchased. The interior is non staining so far, shows off food and it’s entirely easy to deglaze and clean. It’s heavier than Le Creuset and the build is thicker, but there are advantages to that: better slow, low braising and longer heat retention oven to table. The mold is more of a graduated curve toward the bottom than Le Creuset - so there’s less browning surface area, but better moisture circulation from the smooth interior lid toward outer walls basting food downward and toward the center. I find I like the interior taper for deglazing and whisking sauces without furiously working toward corner edges - it’s a more natural and easy glide with Lodge to get the delicious bits into the sauce. It’s thicker, so just be prepared that a full pot roast and veg is heavier to handle than with Le Creuset. I like the slight dome on the lid. It’s fits more and it’s better for the moisture circulation than my experience with Staub. I prefer a smooth domed enamel lid because it’s easier to deglaze and clean than those annoying lid bump designs other brands have. Lodge has an eon of ‘Americana’ classic behind it. Design-wise, that’s a look: the steel shot iron has a little texture and Lodge pieces lean hardy, built to last. The double layer ceramic fills and smooths the surfaces. Lodge Foundry is in Tennessee, USA. Lodge enameled pieces are from China. The handles are a comfortable hold. Better than many other brands. The knob is 500°F tolerant stainless steel with an etched ‘LODGE.’ The lid fits well. The rims are black, unglazed ceramic over cast iron - they don’t slip. 4 hour braises don’t dry out. I haven’t had a problem with dumplings, so I know mine doesn’t lose a lot of moisture. I did notice the sauce reduction was better in it compared to Le Creuset though - just clingier and less separation. I found this a bonus because it eliminated a step with my pot roast jus. But, that also means moisture was escaping a little more than with Le Creuset. Heat distribution and retention is aces. In fact, I had to upgrade my mitts for higher temps and longer fit up the arms just to keep up with it. Hee. For all these reasons: flavor, texture and results for an affordable price, Lodge is superior to other cast iron enamel pieces I own. They stand behind their products. That makes me a brand fan. Conveniently, silicone spacers were included for chip protective lid storage. Or, high heat ‘venting’ while in operation. The best part is the incredible value price. It’s really incredible. It’s still an investment, but I feel like Lodge is not so dear that I have to baby it. Mine hasn’t chipped. I don’t bang metal utensils on it or temperature shock it, but it’s durable and I’m finding I use it more because of this. I’m comfortable putting it through some paces and if the worst happens, I wouldn’t cry like with Le Creuset or Staub price points. I was kind of hoping Lodge would design an adorable stainless or pewter tree branch, woodland creature, antler or pine cone lid knob series. Or, that they’d offer matching little 1/2 Quart lidded enameled cast iron coquettes or enameled cast iron pans and oven casserole sets, muffin pans or a bread cloche so I can extend my Lodge collection. Have had this Dutch oven for a month now and have probably cooked about 15 loaves of bread in it. It cooks the bread very nicely with very even heat in the oven I love that I can pop it in, crank the oven to 500° if I want to, including the lid! The pot is extremely easy to clean. Takes only a minute. I really enjoy having the enamel coating! I love the blue color that the Dutch oven came in. It looks really nice. I would definitely recommend this Dutch oven.
