It offers an abundance of possibilities. Care instructions for cast iron: 1. Wash with warm water. Add a mild soap, if desired. 2. Dry thoroughly with a lint-free cloth or paper towel. 3. Oil the surface of the pan with a very light layer of cooking oil while warm. Hang or store the cookware in a dry place. The American-based company Lodge has been fine-tuning its construction of rugged, cast-iron cookware for more than a century. No other metal is as long- lasting and works as well for spreading and retaining heat evenly during cooking. A great skillet, and man-o-day is it large. Cooks great and evenly, and a lot at once. I love it. The first thing I did when it arrived was check it for smoothness and rust. It was completely smooth and no rust. On first glance, it appeared to be pre-seasoned. So far so good. I, personally like to season my cast iron items myself, regardless of whether they come pre-seasoned or not. Just to be sure. Besides, it only takes one hour. So, I headed to warm up the oven to 400°. Meanwhile, headed to the sink with the skillet, hot water, kosher salt, and "The Ringer Stainless Steel Chainmail Cast Iron Cleaner, XL 8x6-Inch" ($15.99). Quickly scrubbed the inside and outside. Hand towel dried it, then set it on top of a hot burner to evaporate water the hand towel missed. Once the pan was well heated and completely dry, removed it from the stove and applied a generous coating of vegetable oil to the whole skillet. Once the oven was ready, I placed the bottom rack on the lowest level and covered it with aluminum foil. Set the top rack as high as I could, making sure the skillet could lay flat (upside-down) on the rack without touching the upper burners. Placed the skillet on the upper rack, closed the oven door, set the timer for 1 hour, and walked away. Came back after 1 hour, turned off the oven so the skillet could cool off. It was nearing evening at this time, and becoming quite cool outside with a nice breeze. So, to speed up the cooling process, I grabbed a silicone trivet and set the skillet outside. To my amazement, the pan was completely cool in about 15 minutes. Nice. Wiped off the excess cooking oil on the skillet with a paper towel. Time for the cooking test... Filled the skillet halfway with cooking oil, heated it up, and proceeded to cook 10 chicken wings. Wow, they cooked perfectly, no scorch marks, no uneven cooking, no sticking, no nothing bad at all. Every wing came out perfectly and crispy. They were so delicious. Somehow cast iron skillets (cookware) makes all cooked foods taste better than cooking it in any other pan. Seriously. You'll see. This skillet is an excellent product and cooks great. You will love the fact that you can cook so much more at one time, versus the Lodge 12", which I also own. They are both great, but this cooks so much more. Oh, did I forget to mention that it's heavy? Add the chicken wings and the oil, now it's really heavy. It will require 2 hands to move to and fro while cooking most of the time. Fear not... Here's a suggestion. I suggest you buy a silicone cover for the handle, and a silicone cover for the assist handle. They will keep you from getting burned when moving the heavy hot skillet. Or, just use old school pot holders or dish cloths. (You've been warned!) ... show more

  • Big Size, No need to do extreme re-season.
I was looking to replace my Tramontina 14" Nonstick Fry Pan which was getting old and the nonstick had lost it effectiveness after almost 8 years even though I used it only occasionally. I like a big pan for family meals or when you just need the room such as making multiple pancakes in the same pan. nonstick/teflon pans are simple to use but they are not made for high heat and the nonstick coat will only last for a few years then it needs to be replaced. I mainly use a large pan for braising or frying meats and vegetables and sometimes adding sauces to them once cooked, like when I cook chicken thighs until browned and then drain oil and add teriyaki sauce to finish the dish. I was going to get another nonstick pan but I have recently started using my Cast Iron pans more so I decided to get the 13.25" Lodge Skillet at under $40 it is a fantastic deal. I was happy with the size, but beware it is a very heavy pan so my wife can only move it with two hands. Cast iron requires care and knowing how to wash and prevent staining and rust, a few extra steps will keep it great shape and you will have a pan that last decades. I have also seen people doing extreme re-seasoning on these pans to make the sandy texture perfectly smooth on the cooking surface, they are stripping or sanding these pans down. My experience after using this pan for many meals is that it works Great, and there is no need to go to the trouble of resurfacing it. What I did was Wash the pan thoroughly when I received it with warm water and dish soap (this is the only time dish soap is required) and then put it on a medium flame to finish drying it for a few minutes, while it is still warm (carefully) add buzzywaxx or crisbee seasoning all over the pan in a (very very thin coat), put your pan in the oven for 1 hour at 400 degrees and let cool afterward in the oven for another hour, once the pan is cool put a very thin coat of canola oil on it, and your pan is ready to store or cook with! It should be nonstick for the most part but you have to some cooking skills to properly use the pan in accordance with the food your cooking. After cooking just use hot water and a soft brush to clean thoroughly, dry pan and heat on a medium heat until completely dry and let the pan cool then apply a very thin layer of canola oil before storing it. I have cooked eggs, pancakes, meats with sauces, french fries, country potatoes, fajita steak etc... and I have had no problems with cooking or sticking, just great food and a pan that will last forever. ... show more

  • Great quality and the 13.5 inch is awesome
I figured I would share pics of the size. The handle hangs off the stove top about 2 inches. The 13.5 inch is perfect for cooking 2 lbs of burgers. This pan is non stick out of the box. I have used it for burgers, steaks and scrambled eggs. It has a bit of granular texture. I don't think I'll sand it smooth because it works fine enough without the polish smooth surface. I have a pic of my old pan that has been polished smooth. It's a 10.25 with 9 inch cooking area. Overall quality is superb and it does the job well. I love it. ... show more
