We like these pans better than others out there. Durability and non stick are pretty good. The handle is somewhat insulated for stove-top cooking. This one has a thick ferrous bottom for good heat distribution and is supposed work on induction burners. The bottom is smooth and won't scratch glass flat cooktops. (Beware the Gotham pan version that has the small circles on the bottom - those will scratch.) Cleaning is easy. If something does stick, a baking soda scrub with a sponge will get it off. High heat and oil will cause them to lose the nonstick over time, 2 years or more. Metal tongs will scratch a little - use silicon tipped ones.   • Best everyday skillet I have hands down- non stick is true—easy clean is even more true

I am a kitchen gadget collector, including skillets, which are of utmost importance. Now, there's been times I cook a lot for more than one person and I've never been one to try to make it all in one skillet, especially breakfast—and I did have a non stick pan that is still around due to extremely careful use, but it was irritating me because it was no longer flat, didn't sit flat on the burner, spun around while stirring, and could not irritate me more if I tried. It was one I saved specifically for eggs, as you know eggs burn and stick. They are maddening in my cast iron, and maddening in my magnalite. I have little patience. I purchased this first for my daughter—maybe 2-3 years ago. I purchased a smaller skillet for her as well as a pot, and lids, so on holidays she gets "another piece" to her starting set. I ask her often how it's holding up and she told me last time "it's the same pan as it was when I got it, and we use it alllll the time". She said it cleans up BEAUTIFUL. NOW, we can go back to my spinning skillet that I am gifting to a young couple just getting started, because maybe they have some patience. I finally got it! My very own — and yes, I will use it for eggs for the most part, but "one skillet meals" as well. I will say I love this skillet and find the very same - it cleans up SOOOO good, usually I just run hot water in it then use a kitchen sponge… comes out looking like new. I do not use any metal utensils on it, however I've "heard" you can. The instructions say not to, nothing I'm not prepared for with my silicone utensils. If you use oil or butter, definitely cook on low. It heats up fast and stays hot. I'd rather have a perfect over easy egg than something that is brown or scorched, so I do use a low-medium setting and exercise patience. I'm quite happy with this purchase and have used my skillet dozens of times and even did manage to use the heat too high, still came off and cleaned up great. I hope I can use it for the remainder of my life (which, in all honesty- could be 20-30 years. I hope this sucker outlasts me and my youngest daughter grabs it, since, after all—my oldest already has a start to a complete set. I will definitely purchase another piece for her set I started for Christmas, and may even start on my own set. Yes, I'm keeping my cast and my magnalite—everything has it's purpose, and when I eventually leave this earth, my children and grandchildren will all have a piece or three or heck, maybe an entire set of everything I own. I'd rate this for longevity right up there with my stainless steel, my cast iron, and my magnalite cookware. Don't be shy to start with one and add to it as you go. ... show more

I had this same piece and had to replace it because someone scorched the one I had. These are very easy to work with if you have even basic cooking skills. It's easy to keep things from sticking as long as you are using an appropriate level of heat, and the cleanup is effortless.   • Works Better Than I Had Expected

The eggs do not stick like in other pans. Admittedly, the pan is currently not quite as slick as it was when new. I have had it for two months now and have cooked eggs nearly every morning and have done fried potatoes, grilled cheese sandwiches, stir fry, and a few other dishes in it. I did get it smoking hot once and had some stains that were very difficult to get out, but I was eventually able to scrub it off with a plastic scouring pad. I think the key is to keep the temperature down below where any oils will smoke. That usually occurs around 350 deg. depending on the oil. For most cook surfaces that means keeping the temperature control WAY UNDER the MEDIUM mark. I see other reviews where they say the pan was used on "High" and now eggs stick. I wouldn't use ANY pan on high for cooking eggs! I do rub a small amount of butter on the surface when cooking eggs, but I did try it the first time with no oil or butter just to see if it could be done as advertised. Yes, it can be done in this pan. However, I recommend using a very moderate temperature to do it. After 2 months, I do not see any damage to the cooking surface of the pan. Although the manufacturer claims you can, I have not used any metal utensils with it, so I cannot attest to that. Other than the one time having to scrub, cleanup has been simply rinsing with hot water and wiping out with a dish cloth. (I LOVE that part!) Maybe it's just the way I care for the pan, but so far, I am very pleased with my purchase. I did give it 4 stars on heat distribution because it does take a while for the edges to heat up, even when the pan is used on a large burner. I found that it works better for me to turn the heat on low and give the pan ample time to warm up (several minutes) before dropping the eggs in. That is EXACTLY the way I treated my cast iron skillets all my life. I have always been VERY anal about my cast iron...i.e. DO NOT use soap to clean it, DO NOT overheat, DO NOT drop cold liquids in if the pan is really hot because it will cause the patina to pop loose and make things stick. Turn off the heat and allow the pan to cool naturally if it does get a bit too hot. So, at this point, I am just waiting to see if the surface cracks and comes loose as I have had with other non-stick surfaces. It will be back to the cast iron for me the first time I see any cracking or peeling! At least the black patina on the cast iron consists of pure carbon, is edible, and is non cancer-causing. So, to wrap this up, I think this pan will take good care of you, but like many kitchen tools, you must also care for it. ... show more

This stuff is tough! Amazon wants reviews as soon as the staffs unwrapped. I'm basing my review on the 4 year old pan I'm putting in the back of the cupboard. It's still non-stick & good to go after being what should have been "burnt up" on several occasions. Well worth the money.
