  • Lightweight cast iron? Yes please!
I was trying to figure out how I was going to explain the concept of "lightweight cast iron" to anyone who's ever handled a cast iron pan without sounding like a demented person - imagine my surprise when I came back to the listing and see that "lightweight" is the very first thing listed in the description, ha! I thought I was just imagining it! So I have had cast iron pans pretty much all my adult life, and haven't much cared for any of them. People get so precious about them - don't allow anything to touch it but unicorn tears and polar bear fleece! You put WATER on your CAST IRON??? omg you HEATHEN!! etc. Very cultish behavior in my opinion. But it's unthinkable to me to NOT have a cast iron pan. That would be like having a kitchen without a heat source, or without running water. Does not computer. I have arthritis in my thumbs and wrists now, and haven't picked up a cast iron pan in months, and in fact after I ordered this one I thought to myself, "Why on earth did you do that? You won't even be able to pick it up." So imagine my surprise when I was not only able to pick it up, but EASILY! I'm a huge fan of this advance in cast iron technology, whatever it is. The finish is smooth, and the pan heats evenly and quickly. Because it's lighter, it cools down more quickly too, which means I can clean it while I still have the energy/mental attention instead of forgetting about it for a wee... hour. (I wasn't going to say "week," honest. I would never.) There's no fiddly cutesy "design" on the bottom to interfere with heating, or to catch on the grills of the stove. The sides are nearly perpendicular, which I particularly like - makes it harder to slosh things over the side. The handle does heat up, of course, but it takes a good while longer than most other cast iron pans I've had. I've decided my next range will be an induction stovetop, and I was thrilled to learn that cast iron pans in general, and this pan in particular, work well with induction stoves. The only thing I can currently find to "complain" about is that I should have chosen the 10" pan instead of the 12", as the 12" is just a teensy bit too large for my "compact" sized stove. I am refraining, with difficulty, from ordering the 10" right now because I know I'll be moving soon and getting a new range, so I'll wait and see how big that one turns out to be. (All chefs and Southerners please look away for this part, a pledge which includes a revelation that some may find disturbing:) I'm delighted with this pan and will be using it for a long time to come, and I promise not to ever put THIS cast iron skillet in the dishwasher.
