I'll admit from the beginning, I'm still not completely sold on these hybrid pans. They are quite impressive and clever in their design, offering some of the best features of both stainless steel and nonstick surfaces, but my position before trying one was that any hybrid technology likely makes some sacrifices in order to offer its versatility. Still, I was keen to try this one out. And I'm happy to report that it's actually quite a bit better than I expected. To be sure, it's not AS non-stick as a non-stick pan. Nor is it quite as durable or easy to clean as a stainless steel pan. But it does do a pretty good job of combining those features into something that, if you only have the space or budget for a single pan, offers many of the benefits of both. It's certainly more non-stick than my stainless pans and certainly more durable and scratch resistant than my non-stick pans. This particular one is well-made, heats well and evenly, and seems quite durable. If you're thinking about giving hybrid pans a try, this would be a good one to consider.

Includes a textured pan finish that is totally not a copy of the famous Hexagonal brand that's all over the internet. The good news is it appears to work great! Successfully scrambled some eggs with only a small amount of oil without sticking or making a mess. Notes: - In terms of nonstick capability, I'd rate this on-par with your average new Teflon-coated pan. The benefit obviously is you're not ingesting the PFOAs or Teflon here. - The textured finish is really attractive and doesn't appear to scratch easily. I really went at it with a scrub sponge to see if it held up and there's no damage or scratches at all. - Everything outside of the textured cooking surface is highly polished stainless steel so food will stick to those portions and they do collect fingerprints so keep that in mind.

The skillet feels heavy duty and should last a while. Nice easy grip handle. This is just the skillet without a cover. It heated evenly, I used it with a little butter frying some eggs, worked fine. I normally don’t flip what I’m cooking in the air, so I did try doing that. Stainless steel construction. Used it on my gas stove. I’ll give it the 5 stars.

The Good: This is the perfect size for my morning egg cooking. I am blessed to have a small flock of chickens and my own fresh eggs from these beauties. I have eggs every morning and this pan is perfect for my daily use. I have tried multiple ways with my eggs. I stopped doing sunny side up eggs because it was just too hard with other non-stick pans. I was breaking the yokes. With this pan the eggs breaks loose easily and you can just slide them onto your plate. perfect! The Bad: This is my only concern with this non-stick and with other coated pans: I always wipe my pans with a paper towel after use for my first level of cleaning. The First time I wiped this pan, the paper towel was discolored with black. I only use butter to cook, so nothing i added would make this discolor. i can only assume it is the non-stick. Now, since that first cook, it is not as black as it was on the first time. so maybe it just cooked "something" out of the metal on the first go-around. The Ugly: nothing ugly to mention.

This is a well built and high quality pan. Something I think some people miss about these hybrid pans is that they are NOT more non-stick than a traditional type nonstick pan. In fact, they are perhaps slightly less non-stick. They also still need oil for good performance, like any pan, but they are significantly more non-stick than stainless. The whole idea of these pans is a balance between nonstick and the ability to sear more so than just being non-stick, while also being more durable than traditional non-stick. Traditional non-stick pans are terrible for searing and not the most durable, either. This pan hits that balance perfectly. Good searing, good release, and easy to clean.
