I read all the reviews on this eco friendly Cuisinart 11" grill pan and decided to purchase it. First I will say, it is a very good looking pan. I have only used it three times so far so maybe in 6 months I will have a different opinion but it is everything the manufacture claims. I have an electric smooth top stove so I was worried that it might not work for me as it isn't entirely flat on the bottom. It has grooves. Much to my surprise this pan fits perfectly on my cooktop. The handle stays cool and it grills very nicely leaving nice grill marks. Clean up is probably the best part as it cleans up beautifully without any effort. After reading other reviews, I decided not to grill on high and only have put it up to medium and medium high at the maximum. I also let it completely cool down before washing it by hand in warm soapy water with a sponge or paper towel. This pan looks brand new like it has never been used. I also took care in having the pan in drawer where it does not touch other pans as it could chip the ceramic material if other pans are stacked on top of it. I am hoping this pan continues to hold up after months of use. If it does, I will say this material that the pan is made of is the BEST INVENTION EVER. The pan is also relatively inexpensive. At less than $50, you can't go wrong. After 4 months of use, this pan is holding up very well. Grills nicely, easy clean up, and nothing sticks. Eco friendly too. Go for it. You won't regret it. After 7 months of use, I see that the cleanup of this pan is taking a lot more effort. It is still the best grill pan I have used on my smooth top range but you can see where the finsh is wearing off some as the middle of the pan is becoming lighter in color than the rest of the pan. I have never overheated the pan nor have I used anything abrasive on it. ... show more

  • Fantastic Cookware!!

My wife recently began researching possible harmful items in our home, and asked me to get cookware without Teflon. Having grown up with non-stick pans, and having had a bad encounter with stainless steel, I was expecting this change to be a nightmare. Fortunately, I was pleasantly surprised. I researched healthy alternatives to non-stick and came up with ionized aluminum, stainless steel, cast iron and ceramic coated cast iron. None of these seemed like a great choice. I then went to Bed Bath and Beyond to look at pans and discovered the Cuisinart Green line. After seeing the cast iron, I realized we probably would somehow damage our new glasstop stove as it was so heavy, so ceramic coated aluminum sounded great. I settled on either Calphalon One infused ionized aluminum or the Cuisinart line. However, Bed Bath and Beyond is a bit confusing with the Cuisinart line. They sell Cuisinart "Greenware" as a set and Green "Gourmet" as individual pieces. The Green Gourmet set is a bit more expensive, and I was advised by the salesperson not to buy GreenWare as it has a rough bottom that may scratch a glass top stove. He offerred to order a Green Gourmet set, but I decided to buy one Caphalon and one GreenGourmet frying pan and test them before investing in a set. I honestly didn't expect either to work as well as my non-stick pans. I generally only cook breakfast on the weekends, so I cooked what I know how to cook. I took both pans and set the burner at the same setting (6 on my stove which is the setting I used for the non-stick pans). I made pancake batter and used an organic olive oil cooking spray. Interestingly, the Cuisinart pan was too hot at 6 so the pancakes burned and I had to set the stove at 4 to get the same results as the 6 on the Calphalon pan. Both pans were great with the pancakes--better than my non-stick pan and probably the prettiest looking pancakes I have ever made. The Cuisinart pan was very easy to clean, but the Calphalon took a bit more effort. On another day, I cooked eggs. Again using the same Olive Oil spray. The eggs immediately stuck to the Calphalon pan. Having read instructions on using cast iron and waiting for the eggs to "release", I waited, and waited and waited. What a mess! I couln't get the burnt eggs off the pan. Of course as soon as I put the pan in the sink with water, they popped right off so clean up was easy. I'm sure there is a correct way to cook eggs on this pan, but I couldn't do it after 4 tries. On the Cuisinart Pan, I had no problem, and surprisingly, the eggs seemed to be easier to turn over than on our old Farberware non-stick. So after this, I decided to get the Cuisinart and ordered from Amazon which was $50 cheaper than the price quoted by the Bed Bath and Beyond salesperson who offerred to order it for me. ... show more

I do not have a lot of cooking time on this pan but I am very pleased with it. I HAVE used the 12" version with great success. I have been looking for a quality non-stick pan that did not employ PTFE as a component in the non-stick surface OR use PFOA in the manufacturing process. There are newer non-PTFE coated non-stick products out there but if you look closely at the specs they may still use PFOA in the manufacture of the pan's cooking surface. I am done with this stuff in my food or its fumes in the air. Now, I DO USE a bit of oil or natural cooking spray on the surface when I cook, but not much. Having noted that, this pan is a dream to use. It is very slippery for both cleaning and cooking. One still needs to use non-metal utensils. I have put both sizes in the dishwasher, and they clean up well. Honestly, hand cleaning is just as easy with this pan. I don't use cleaners that have phosphates or chlorine in them, so the pans get a pretty gentle ride. Will it last? I am very hopeful. At least, I won't be burning off dangerous chemicals if it should degrade. The price point for this series makes it an inexpensive test. One con: they don't offer a recommended cover as far as I could find. I bought a third-party universal 8-12" cover for the 12" pan but it does not fit this 8" pan. UPDATE 10/29/2010: Reaffirming everything that I said earlier. I use these pans for almost all of my frying. I have had no issues whatsoever. I plan on adding another piece or two. I must mention that I really don't use these to sear meat. I still use a trusty old REVERE stainless pan or a le Creuset cast iron pan. Update 2/23/2020: Have used the 10” pan for almost 10 years and it still is great. I finally tossed the 12” one as it diminished its overall utility. I have a great set of Williams Sonoma solid SS an use them often. I had a 10” Cuisinart “everyday” pan for a long time and tossed it as the Teflon coating began to chip.
