Very pleased. Kneads nicely and isn’t as sticky as others I’ve used. Pizza crust browns nicely compared to others as well. Very good flavor and texture. I cook the dough on a 10” pizza pan by itself at 450F for about ten minutes or until just lightly golden, remove, add sauce and toppings then finish cooking. That works best for me in a large toaster oven. Bob’s Red Mill pizza flour will be the only one I use in the future.

This 00 flour compares very well with import brands I've used but at a much nicer price per ounce, especially if you catch it on a price dip. As with all Bob's Red Mill products I've used, the quality is excellent. Zero complaints -- an excellent 00 flour and a great value. Five stars.

Instructions say you can let the pizza dough ball rest in the fridge longer than overnight, up to three or four days. I like two days rest in the refrigerator for the doughball. I found that, for me, more than one day makes the dough a lot more stretchy and fun to work with. Its flavor is absolutely the best.

After spending some time in Italy, and never Having any gluten issues, I learned that the flour they use is similar to this one . My daughter used to work at Bob’s Redmill and knew how pristine and clean they were and how diligent they are on keeping with the integrity of their ingredients . The first thing I made was my Italian vanilla cookies. Everybody went nuts. So light and fluffy and the bread comes out just like an Italian would make. It’s a treat now that I can eat bread Without having a horrible stomach. Give it a try, it’s really amazing
