The vegetarian bologna that my Mrs. likes is no longer available so I set out to make her some home made "Phony Bologna". Vital wheat gluten is one of the major ingredients and I need a good amount of it. Unfortunately it is only sold in small packages locally. This VWG is fresh, does not have any strange odors or flavors and it allowed me to make a tasty phony bologna that my Mrs. enjoyed eating on my first attempt. Crisis averted. I use this gluten for both sourdough and pizza dough. It works perfectly for my homegrown recipes. The reason for four stars is that the sealing bag functionality isn't that great. I ended up just putting it into another container as the sealing is frustrating.
