First of all, take your time preheating, do not set these on high or even medium high, I've found they work best starting at right between medium and med- high on my infra red stove, most of the complaints I see are from sticking and burning, These are professional quality pans, and will preform as such, ANY pan will fail if you try to heat too high and too fast. I have made ice cream base, cream suace, steamed rice, Seared and braised pork chops , pan seared steaks, vegatables, I know these pans will preform perfectly for Sautee. They heat quickly and evenly and hold the heat, lids fit great but not too tight as to allow steam to escape. wish i bought these years ago. ONLY NEGATIVE is the pictures show measurement markings on the inside of the pans, They do not have. not a deal breaker as I do not need them, Also when i bought it stated HURRY only 5 left, now it shows 14.     • Wonderful set, but inspect it carefully

Wonderful set - cooks evenly, clean-up is a breeze. Lids fit well, and the rims are so easy to pour from. Fried an egg with no oil/fat and it didn't stick. You won't be disappointed with this set. Only problem is they pack one lid on top of the 2qt sauce pan and it scraped/scratched the nonstick. I was pretty upset about that so I ordered an exchange - same problem but not as bad with that set, so I kept it. Figured they all would be that way... the company should pack their products better for this price. ****Edit, after one year of use:*** these pans don't hold up. Eggs stick regularly to the frying frying pans. I have to scrub with baking soda to get them to even look clean. I washed these dishes by hand for the first 2 months, but then started washing in the dishwasher on top rack only. Maybe the dishwasher did this, but since they say they are dishwasher safe, and I took the effort to use only the top rack it shouldn't matter. I still like the set, but I am terribly disappointed - when paying this much for a set I hoped it would hold up longer than a year. Honestly, I'm no better than just buying a set at Walmart with these results. ... show more

    • Best way to clean food residue

After a few weeks of use, some of the food started sticking in the fry pan and it was hard to remove. I tried the recommended vinegar method but it did not work. Then I did more research online and found the absolute perfect way to clean it. I use it on the inside and on the bottom of the pan. 1) Don't run water into the pan while it is hot. Wait until it is cool to clean. 2) First, clean with hot soapy water. Do not use any abrasive cleaner. 3) Next, if there is any remaining food residue, sprinkle baking soda combined with a small amount of water in the pan, making a paste. Rub with non abrasive cloth. (I use a paper towel. I also use this on the bottom of the pan if there are any burn marks on it.) The baking soda takes everything up easily. 4) rub a small amount of oil inside pan. (Use an oil that has a very high smoke point. Peanut, Canola, Grapeseed and Avocado oils are good.) Wipe off any excess oil. I haven't had any problems since I started cleaning the pans with this method. These pans are great. They are just the right weight. Easy to clean. Beautiful design. I am so happy I bought them.     • Not nonstick, residue after use hard to remove, absorbs smells and flavors

I bought this set about 1 1/2 yrs ago and not happy, I'm pricing out another brand set and will need to using these. Some of the pans are nonstick, but the smaller frying pans for some reason are not - so I'm using a saucepan to cook eggs most of the time. The larger pot I use for soup and sauces and for some reason after washing numerous times its holding onto smells and flavors of the meals I've cooked prior - I can't figure out where it's holding onto this but I can smell it when I'm trying to cook a new meal and it's off putting to say the least. There's also times where there's a weird black residue inside the pans/pots that I can't get off with non abrasive sponges, even tried scrub daddy and salt and baking soda/vinegar and nothing has removed it. Just didn't expect that a year and few months later I'd already have to find a new set after paying over $300 for this. ... show more

These pots and pans are the nicest set I’ve ever owned. I have always had non-stick pans and have put off buying stainless steel for fear of cleaning/keeping them nice, even though I REALLY don’t like non-stick chemicals. Now I wish I had switched years ago! It is so easy to use them in non-stick fashion: put them on the heat for a half a minute or so, then add a swirl of regular olive oil (not extra virgin). Once the pan bottom has a layer of evenly distributed oil that looks shimmery, you’re ready to cook! They clean up just fine. If I do get a bit of cooked-on stuff, like meat drippings or egg bits, I just soak soapy water in it for an hour or so. No issues thus far—they are as clean and beautiful as when I first unboxed them. Follow those steps, and you’ll have no problems. My only complaint is that they’re significantly heavier than non-stick pans, but I’m happy to lift a more substantial pan knowing it isn’t full of Teflon chemicals. ... show more

I had bought a single piece (a saucepan) several months ago and loved it. Decided to get the whole set. I love using the set now, and I love everything. The problem, as sometimes happens with Henckels, is that things don't quite match what's shown in the picture. *Pay attention, Amazon*. The set shown in this posting included the pasta insert and steamer insert. The set I received, had neither. Now I'm stuck with finding the needed pieces elsewhere. After looking at the ad again, those pieces are not listed, although they are clearly shown in the pics. My bad, i guess for not noticing that, but still. Zwilling Henckels makes some of the finest products in their categories, and the pricing reflects that. They are not cheap. Their online presentation, however, leaves much to be desired. ... show more
