The pan on the left has been used probably 20 times and has darkened significantly but we kind of expected this to some degree. The next, now chrome pan, has been used only once, the 3rd pan has been used 3 times and the 4th has not been used yet. We have always used these on low to medium heat and have always allowed them to completely cool before hand washing and drying. I am not super confident in the thickness of the copper. It almost appears they were anodized. They do heat very evenly and clean up well. Hope to hear something from the manufacturer soon 419/23 Update - never heard anything from the manufacturer however Barkeepers friend….no clue what’s in this stuff but it literally turns the darkened copper to brand new looking in seconds, you can drip it on the copper and watch the run completely restore the finish to new. Our chrome looking pan instantly went back to like new and has not turned chrome again. They do age/patina a little with use but barkeepers makes them look brand new everytime. They are great to cook on once you get used to lower heat and easy to clean. Very happy with them - changing review to 5 stars. FYI we ordered the lagastina set also to compare…these are better quality and the sizes are much better, sent them back. ... show more

    • A great beginner-friendly copper set

My husband and I have been on the hunt for a healthy but high quality set of pans for a while. We were gifted a Caraway set from our wedding registry but they soon started to chip and lose their appeal. We switched to using cast-iron, but then moved overseas and since we no longer have a gas stovetop we wanted something else. I have always dreamed of owning copper pans, but I was scared to invest so much money into them and then accidently destroy them in the process of properly knowing how to use them. This set is not like your typically $500-1,000 a piece set. They are not tin-lined, they are stainless steel. That means that they are easier to learn and not as expensive overall (and you won't have to get them re-tinned, which is a whole other thing). The learning curve was not bad and we have really enjoyed using them. They happened to arrive on Christmas Eve so we used them then, and it was great! If you are like me and want to have beautiful, healthy, high quality pans, but can't throw $1,000+ at a new set, this is a great choice. ... show more

    • Beautiful - Maintenance Required!

Absolutely beautiful cook set. If you don't want to deal with maintaining the finish of your cook set, then copper is not for you! Copper oxidizes, period, and there is no way around that. If you require maintenance-free, then you want stainless. Yes, these pots and pans are guaranteed to oxidize and discolor with heat. It is super easy to restore the color with lemon and salt or ketchup or whatever other acidic compounds, but the dedicated metal cleaners will amaze you with how quick and effective they work. The sample of Penny Brite that was included works phenomenally on all the copper, stainless, and aluminum surfaces. Bar Keeper's Friend comes in a scouring powder or soft cleaner. I recommend the soft cleaner on a soft (non-scrubby) sponge if you want to keep the copper shiny for as long as possible. The shine will eventually become a matte finish. Polish can be restored, but that's a whole different process from cleaning. My only gripe is that there is no lid for the 10-inch fry pan... but then this set comes with a saute pan and cover, so it makes sense. I will try to find a matching 10-inch vented glass lid to add to this set. ... show more

Good pans, but the copper discolored after the first use. Now there no show piece. If I'd have know before buying i would not have punched. The copper on some pans looks more like brass. Any stain on the copper won't come off. Id say these are not worth the money.
