Description

The Victorinox (formerly Forschner) 6 inch Semi-Stiff, Curved Blade Boning Knife features a Classic Rosewood handle and extremely sharp blade that holds its edge. As with all Victorinox knives, the handle is ergonomically designed to minimize wrist tension and provides a natural fit. Victorinox Kitchen knives all have high carbon, stainless steel blades that are hand finished at Victorinox in Switzerland by skilled craftsmen. Each knife is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished. Victorinox uses a special tempering process to produce an edge that can be resharpened over and over again. The curved blade of this knife provides an ideal working angle for cutting close to and around the bone. I bought this knife for my daughter as she and her family process most of their own meat and wild game. I used to own one but misplaced it years ago. For the price you cannot go wrong. Very sharp and easy to maintain the edge with a fine grit honing steel. You will have to sharpen your knife eventually but the steel maintains the edge. Great knife for the price.   • Great processing knife!
If you are cutting meat such as beef or like we do with Venison. This knife did the job and stayed sharpened thru the process. I warn you though, this blade is sharp and you don't want to be cut with it! I highly recommend it and it's the same knife as butchers on social media.

Victorinox knives are great. First saw these on the Bearded Butcher Youtube channel as his preferred 6” semi-stiff boning knife. So I bought this and understand exactly why. This is a great knife. Very beautiful and well built and extremely sharp. To get this for this price point is amazing.

I bought both the 6" and 8" boning knives. They don't look like high quality workmanship since the blade is punched out from plates, instead of forged. But they are sharper than they looked. They do cut nicely, easily separating the meat or fish with only one cut. And they did well on my paper shaving tests. The blades are straight and thin. They are somewhat flexible as boning knives should be. The only defect I found is that there is an obvious gap between the blade and the wood handle on the 6", as also mentioned in another review. My 8" is much better without obvious gaps. I did not give a five-star rating because of the wood handle. ... show more
