I’m a “gluten” for punishment and wanted a second starter culture—this one for rye sourdough. I looked through the vast selection on Amazon, and this one caught my eye because it didn’t look like the others. That was a great indecision on my part. Nope, no photographs of a happy and bubbling culture. I’m using a commercial seed culture, and that will take a couple of weeks to arrive. And then another week or so to ripen. I wanted to add to the enthusiastic comments for this product a lot sooner than that. Sure, I’ll edit my review if something happens that isn’t expected. The glass lid included for refrigerator storage seems way too tight. You need to allow fermenting gas to exit the jar while it is refrigerated. The date, time, level band, and stick-on thermometer—I put them on for a photo, but I’ll probably pull them off when I start growing starter. Despite the seller’s note that the opening in the jar is large enough to get a hand in for cleaning, it is a very tight squeeze for me. The gray silicone stir thingie is new to me, and after playing around with it dry, I’m wondering where it's been all these years. It's creatively engineered and actually swivels on the handle. Everybody includes some sort of lame with their sourdough kits. This is the only one that I can recall that includes a surgeon's scalpel. I don’t have much luck with pointy razor blades, and I’m hoping that the curve will get me better results. I’ve included a photo that should help folks put the blade into the handle. It tilts, slides, and snaps. Removing it is a bit tricky in that you have to pry up the butt so that it can slide off the handle. Make sure that, in both cases, you are working with the dull side of the blade toward you. A final note on the metric marks on the jar. Sourdough materials should be measured by weighing them, not by using volumes. By weight, it is equal parts fed starter, flour, and clean water. You can use grams or ounces. Any current kitchen sale can switch between them and can also do tare. I use 8 ounces for all. ... show more

This item was exactly as described and came securely packaged between formed styrofoam blocks with its box. The glass is nice and thick. I was skeptical of the thermometer, but it does actually seem to stick well and seems accurate. I'm starting my own starter (not with a commercial starter), so I keep my glass in my oven to keep it away from my 74-degree air conditioned air. The thermometer turns green at the optimal range and if you go above it, the range above turns blue. I agree with another reviewer that the glass lid is very snug. That's great if you want to use it for something other than dough, but with fermentation you want the air to circulate. So, I use the included little cloth cap with the elasticized band over it. I'm a very experienced baker, but this is my first time attempting to make my own sourdough starter. I'm not having much success. The dough smells nice and fermented and doubled in size on day one, but hasn't kept doubling in size as it should. That said, I suspect that is due to the inconsistency in temperature (too cold), not due to the jar itself. I find the reminder band and the markings on the jar not useful. For measuring my feedings, I always measure by weight using my kitchen scale. The stirrer is useful for reaching all the way down to stir. As another reviewer stated, I wouldn't say my hand fits "easily" in the jar. My stirrer also does not swivel, as someone else stated. It is just a straight silicone stirrer. To be honest, you could probably just use a wide-mouth canning jar to accomplish the same thing. But for the price and the extras that come with this, it's kind of nice. ... show more

I don't know why I never had this before. My hubs and I both like to bake. We have a sourdough starter and also a string of text messages like "did you feed the starter?". This is a large jar and a nice adjustable silicone ring to take away to define when the starter was last fed. The silicone stirrer is great as well. I can't speak to the lame knife as I already had one. I like the cloth bonnet for when we are actively working with the starter and the glass lid when we want to refrigerate our starter for another time. I really love this holder for my sourdough starter! The measurements on the side are helpful, and the cover is great for allowing air to the starter but keeping it nicely covered. The spatula is perfect for stirring in your added flour and water. Be forewarned that the blades are SUPER sharp (I cut myself putting the first blade on the knife), but I find it easier to control than the traditional round bread scorer. ... show more

Good starter kit. Glass is very thick and looks very solid. The best part is the size. 40oz is a really good size when compared to my old 30oz. Comes with a silicone base that does a good job at keeping the vase from moving. Also has an elastic band with markings to help track day and time that the starter was added.
