For my birthday I decided I wanted a new chef knife, so I started shopping and researching. I had decided to get myself a great, professional, German steel, and had chosen one at about 3x the price. Well, before buying I mentioned this to a friend who is currently attending cooking school and he suggested I check this one out. So I did. I ended up getting this full-tang, German steel knife and wow - I couldn't be happier. Blade is REMARKABLE at this price point - the thick steel holds an Edge like crazy, even after I've modified the angle to 17° (SHARP sharp). The balance is out of this world. I don't much care about the handle material but this Olive wood is gorgeous. The shape of the handle fits my medium size male hands perfectly and I feel like I have surgical control when cutting both meat and veggies. It feels like it will last forever in my hands. I purchased this for our office at work for use in the kitchenette. We have alot of apple lovers here. This paring knife is sharp, beautiful to look at (nice wooden handle) and it does the job easily. Even on orange peel. I love that it has a sheath for keeping fingers safe when in the drawer.
