After owning several professional knives and well known brands, I’ve become skeptical of gimmicky companies endorsed by celebrity chefs. With that said, I still love Gordon Ramsay and purchased this knife after being sent two Hexclads pans because the quality of said pans was very impressive. Right out of the box this knife is literally razor sharp. The weight distribution is dead even between blade and handle, even enough to balance on one finger. It’s slightly weighted for easier downward chopping. I can easily say I will be using this every day for veggie prep. Also I got this on sale and saved 50 bucks. The value for the price is absolutely worth it. I own a 300 dollar knife that just took a backseat to this one. ... show more

I picked this up kind of on a whim, not expecting it to outshine my Shun, but it’s quickly become my go-to paring knife. It holds an edge way better than I thought it would, and when it does start to dull, a few swipes on the honing rod and it’s back in business. Super easy to maintain. It’s also held up really well. I’ve used it daily for everything from peeling citrus to trimming proteins, and it still feels solid and sharp. Honestly, I find myself reaching for it more often than my Shun now—it just feels a bit more nimble and ready for anything. Really impressed with how this little knife performs.
