Excellent cast iron frying pan with glass lid, silicone lift grip, and a nice long handle. Yay. I finally got rid of the last Teflon pan I will ever own. Let's face it coated pans just don't last very long. That's not good for your wallet or our planet. When I received my new 8" cast iron fry pan I fired up my BBQ grill and got the temperature up to 450F. While the grill was heating I washed my new pan and coated it with cooking oil, inside and out. I then popped the cast iron pan (no lid) into the grill and closed the grill cover to bring the temp back up to 450F. After about 15 minutes I recoated the inside of the pan with oil and closed the grill lid for another 15 minutes. At that point I shut off the grill and left the pan inside overnight. That's it for the seasoning. Came out perfectly. I've been cooking meals in this pan for weeks now and NOTHING STICKS to it. Perfect sunnyside and over easy eggs every time. And yes the inside cooking surface is rough, but that actually helps the pan to be non-stick and the seasoning is durable. It works just as well as Teflon but cooks faster, more evenly, and food tastes much better. Just learn how to cook on and care for cast iron pans and you will never look back. I buy cast iron skillets for friends, grind/sand them smooth and re-season them. I liked the long handle on this, so bought one. SUPER rough. For the first time I had to use a Dremel on spots. By far, the roughest skillet I have ever done.

This was my first experience with cast iron, and I was not very impressed. Frying an egg with this pan is difficult, and I don't want to add oil to the skillet immediately before adding the egg. I've tried some other things with this skillet, but I don't see the advantages to a non-stick skillet. Make sure you use a towel or mitt to pick up the skillet; the heat transfer to the handle is a safety issue. I definitely see a use for this pan, if you are transferring to the oven. I know there are experienced chefs that will disagree with me, and I respect their opinion, but for a short order cook, I don't see any advantages. ... show more
