I really like this smoker. I have been a Weber Smokey Mountain user for decades, and still consider it one of the best smokers out there. Recently we have been making some sausage and snack sticks that require a couple hours of temperatures around 140, then get ramped up every hour. That is a real chore with a charcoal smoker. I owned a Masterbuilt 30" years ago and enjoyed using it. One of the things that really appeals to me about this smoker is parts are readily available. There are some great meat smoking forums with great support for these smokers as well. I anticipate being able to use, and probably upgrade, this smoker for many years. The one area where it seems to fall a bit short, though it may not be enough to make a huge practical difference, is temperature control. I used a remote temp probe to monitor the temperature in the smoker, and it would vary over 10 degrees frequently over a couple hours. There are quite a few folks that add an external PID to control the heating element that makes this unit much more accurate with regard to temperature. A lot of foum posts say the addition of a PID makes this smoker compatible with smokers costing much more. I also wanted to be able to cold smoke some cheese, so I purchased one of the Masterbuilt cold smoker attachments to use with this smoker.   • Good smoker but damaged upon delivery

I have had a couple of these smokers over the years. I do a lot of cooking and hosting parties and it's bigger size really helps. I can do enough butts for around 100 people per round and it does a fantastic job holding temperature and they always turn out perfect every time. With that being said I ordered a new one to replace the one that I have had for the last few years. When it arrived I opened it and it had pretty significant damage for something that is supposed to have been brand new and still in the original box as you can see from the pictures. However, I had to start BBQ that night and it was my only option so returning it was not an option. Then come to find out that it has been damaged so much that the shelves when filled with meat won't stay in the slots that are built in for them (I found this out the hard way)! I had to put a board clamp on the smoker to squeeze the sides in enough for the shelves to stay in their slots. Don't know what happened to these things but I do know I'm not the only one who has had this issue so someone needs to figure out what is going on!! ... show more

I like the size. It's bigger than the 30 inch propane I got rid of. The temperature was hard to regulate with the gas flame. I burnt off the oil on the new metal. Nasty smell. I ordered the cold smoker attachment that has not arrived yet. I'm waiting until I get that working to cook some meat. The temperature controller on mine has about a 10 degree dead band. Box is pretty well insulated. ( the old propane smoker had no insulation) Nowhere in the manual does it recommend covering the water and drip pans with heavy duty aluminum foil. It will save lots of work during cleanup. The shelves need to be open (not covered) for heat circulation. Good luck. Where there's smoke, there's flavor. (not Masterbuilts saying) ... show more

This was my second 40" Masterbilt smoker. Not the quality of my first one. I went to smoke 8 pork butts as I had done many times in my old smoker. I prepped the smoker as usual and started putting my butts on the racks. After I placed the last 2 butts on the top rack everything collasped. All 8 butts crashed down on the water pan making one heck of a mess. The old smoker had metal holders that mounted on the sides of the smoker. The new one has slots stamped into the metal sides of the cabinet. The weight of the meat on the trays caused the sides to expand and all the racks came tumbling down. Another case of sacrificed quality for profit. If you buy this smoker be prepared to add braces to the sides of the smoker to support the weight of the meat. I'm not a first timer at this. I have purchased 5 30" electric smokers and 1 40" inch smoker(all Masterbilts) in the past few years. This will probably be my last one and will look for another better built smoker neat time. The media could not be loaded. This is the third one. I was given a 30' smoker and the control went bad. MasterBuilt sent me a new controller for that one. I haven't had time to install that one yet. While I waited, I ordered the 40' in Jan 24, the controller was bad when it arrived. Since I bought it through Amazon, I had to return the whole thing and get a replacement one within 3 wks. The second one arrived, with a bad door (replacement door on my porch) and the controller went whacky after the second use. Seems to be a manufacturing issue. Too many issues for it to be a "one-off". I figured it out. There is a manufacturing malfunction not allowing it to vent properly so the steam gets caught in the time/temp setting. I have always smoked out of a 55 Gal drum. I decided to try the set-it-and-forget-it type of smoker and see how they worked out and try a few things before I put a big chunk down for a better-quality smoker.
