So, having worked in restaurants and seen carbon steel pans in high intensity action, I knew I wanted to try this. It did not disappoint. I was careful to do a few batches of bacon as my first uses to get the seasoning down really well and from there it has been amazing. The ONE thing I would say could make this pan better would be a thin base layer of aluminum for conductivity help. It does have a center zone of heat accumulation, but as I am mostly doing skillet meals in it that I stir continuously, this doesn't faze me a ton. If you were wanting to make something that just sits in the pan, like a frittata or pancake or something, you might not like the uneven heat distribution. But beyond that, I love the surface immensely and the easy clean. I love being able to use metal utensils in it. I love the lightness, how it is like cast iron but so much easier to manipulate.     • I absolutely love cooking with it, BUT…
The pan heats up quickly and is great for searing foods. Works very well with glass top stoves. However, the pan bowed upward in the middle, so all fats, eggs, whatever, drifts to the edges. A pan this expensive should never do this. I bought this in March 2023 while moving to a new city, renting a short term apartment and in need of cookware at 2 locations. I was super excited to order this pan.. I ordered the 10” right away, and a full set later as a wedding gift. This pan arrived bowed… I’d have returned it, but I was too preoccupied with my move, etc. I found a less expensive brand on X via CaryKelly, and I’m planning to give that a try. ... show more

I am enjoying this new pan. It's lighter in weight and to me, it's easier to clean. The handle allows me to pick up pan without gloves and move the oil around inside pan with ease. Cast iron is pretty heavy when trying to move oil in the pan and the handle is hot! I'll see if my daughter wants my cast iron skillet. ... show more

I ordered the 12” and 10”. I received the 10” when promised, but the 12” has been delayed. So far I have enjoyed the 10” pan and hope the 12” shows up. The pan has arrived! It is a solid pan and I'm looking forward to cooking with the 12" as well.
