Please read this section before using your cookware for the first time. The information it contains will help you achieve the best possible cooking results.Enameled cast iron is a remarkable and robust material that performs well with modern requirements for food preparation and cooking. Whether you choose to stir-fry, slow-cook a casserole, sear a steak or bake a cake, there is a shape that is suitable. Cast iron performs well for either slow cooking or high-temperature searing.Cast iron can be used reliably on any heat source, including induction, and with any oven or grill. It has the ability to retain heat efficiently, which allows for use of lower heat settings in stovetop and oven cooking. On the table, a hot covered dish will keep food hot for second servings.Cast iron can also be used to keep foods cold. A chilled dish becomes an ideal cold food server on a hot summer day. It can also be placed in the freezer for food storage or advanced food preparation.High heat temperatures should only be used for boiling water for vegetables or pasta, or for reducing the consistency of stocks or sauces. High heats should never be used to preheat a pan before lowering the heat for cooking. Cast iron retains heat so efficiently that overheating will cause food to burn or stick. The vitreous enamel surface is impermeable and therefore ideal for raw or cooked food storage, and for marinating with acidic ingredients such as wine.Cooking tips for shallow frying and sauteing:For frying and sauteing, the fat should be hot before adding food. Bring the pan and fat or oil to the correct temperature together.Oil is hot enough when there is a gentle ripple in its surface. For butter and other fats, bubbling or foaming indicates the correct temperature. If either begins smoking, or if butter begins browning, it is too hot and should be cooled slightly before proceeding. The quickest way to do this is to remove the pan from the heat source for a few moments. For longer shallow frying a mixture of oil and butter gives excellent results.

  • Almost perfect
Color: Marseille Style: Handle
IDK if I got factory seconds or if this model went on sale everywhere at the same time because they all were less than perfect. On my pan, under one of the spouts the glaze is so defective you can feel the sharpness of the iron, and it's obvious when compared to the other side (all pictured). I didn't try to contact Amazon (vendor) about it so I can't blame them, but it's upsetting considering the price. As far as performance goes it's pretty good, but imo a 12" wide, 1.5" or 2" tall would be a far more versatile size. BTW, I fried an egg in this pan and it was fine, none of the tragedy stories you read, just remember to use a little fat, a little is enough as long as you coat the whole surface of the pan. ... show more

  • Best cookware -- E V E R
Color: Marseille Style: Handle
Love it, love it, love it. What a pleasure it is to cook with Le Creuset anything!! I buy each piece in a different color so that I have a rainbow of cookware. As to whether or not the black satin is easier or harder to clean that the older white finish, well, I have both and consider it a 50/50 proposition or half dozen for one finish and half a dozen for the other. When I use the frying pans with the satin finish, I simply put warm water in them and let them sit for awhile. Usually any stuck food soaks off; if any remains, a quick swipe under water removes it. The white ceramic cleans similarly. Regardless, I love Le Creuset cookware and am adding pieces as a treat to myself periodically. And for someone who likes to cook, this cookware is indeed a treat. I simply love it! ... show more

  • Perfect
Color: Marseille Style: Handle
I bought this skillet for my fiance, who is an amateur chef, and he is absolutely thrilled with it. He says it is far and away the best he has ever owned. This skillet heats consistently and evenly, cleans easily, and looks stylish hanging on our kitchen wall. It is not teflon-lined, which we prefer, but does have an anti-stick coating (which my careless fiance has yet to manage to scratch; not sure he could even if he wanted to). A caution: it has to be re-seasoned pretty regularly to keep food from sticking. However, even if you don't season it very often, food doesn't stick nearly as badly as it would to a regular pan. A warning to those who aren't very strong--because of the high-quality components, this skillet is HEAVY. Overall, an absolutely excellent cooking tool! ... show more

  • Tiny skillet
Color: Marseille Style: Handle
Who in the world counts the handle in dimensions. They show 16" but in reality it's only a 10" cooking area. I'm very disappointed and Sent it back

  • Skillet
Color: Marseille Style: Handle
Love the skillet but things seem to stick and I have made sure that I fully understood the directions before I used it and I have never put it in the dishwasher. I have a 6" omelet pan that I have had from LeCreuset for years and it doesn't stick. Any suggestions would be welcome - I am careful to have butter or oil in the bottom as carefully watch the heat on the stove - I have a ceramic top stove. Thanks for any help you can give. ... show more

  • Great skillet!
Color: Marseille Style: Handle
I've owned it for a little over a month now and use it everyday and it's held up so far. I've fried in it and I've baked with it and the food comes out much better than my cheapy tools of the trade skillet. The only issue I'm having right now is that there are white stains and it's not water stains so I don't know what it is but it doesn't affect the cooking at all. ... show more

  • a skillet to last a lifetime
Color: Marseille Style: Handle
I have a larger one of these that I found at a garage sale for $5. My daughter wanted a smaller one for a gift. She is as happy with hers as I am with mine. If you are familiar with cast-iron cooking you will have no problem with this. The finish is stronger and less corrosive than cheaper cast iron. A pleasure to use these. ... show more
