Enameled cast iron is a remarkable and robust material that performs well with modern requirements for food preparation and cooking. Whether you choose to stir-fry, slow-cook a casserole, sear a steak or bake a cake, there is a shape that is suitable. Cast iron performs well for either slow cooking or high- temperature searing. Cast iron can be used reliably on any heat source, including induction, and with any oven or grill. It has the ability to retain heat efficiently, which allows for use of lower heat settings in stovetop and oven cooking. On the table, a hot covered dish will keep food hot for second servings. Cast iron can also be used to keep foods cold. A chilled dish becomes an ideal cold food server on a hot summer day. It can also be placed in the freezer for food storage or advanced food preparation High heat temperatures should only be used for boiling water for vegetables or pasta, or for reducing the consistency of stocks or sauces. High heats should never be used to preheat a pan before lowering the heat for cooking. Cast iron retains heat so efficiently that overheating will cause food to burn or stick. The vitreous enamel surface is impermeable and therefore ideal for raw or cooked food storage, and for marinating with acidic ingredients such as wine. Cooking tips for shallow frying and sauteing: For frying and sauteing, the fat should be hot before adding food. Bring the pan and fat or oil to the correct temperature together. Oil is hot enough when there is a gentle ripple in its surface. For butter and other fats, bubbling or foaming indicates the correct temperature. If either begins smoking, or if butter begins browning, it is too hot and should be cooled slightly before proceeding. The quickest way to do this is to remove the pan from the heat source for a few moments. For longer shallow frying a mixture of oil and butter gives excellent results.

This expensive pot replaces my old non-stick 5-quart aluminum frying pan. Everything I did in that old rag (and more) can be done in this cast iron beauty! Expensive? Yes. However, you usually get what you pay for. I do not, for a minute, regret buying this braiser. It is many times better than my old frying pan. It cooks evenly. It’s 5 quart capacity is versatile: You can cook for a few or for many. You can fry, braise, stew, brown, sear, roast, bake, cook rice, and make soup in it. And, it keeps food hot longer with its heavy construction and lid. Heavy? Yes. But not unmanageable for a woman with average strength. Due to its size, storage is an issue for me. I want it readily available but not in the way. The top of the refrigerator is where I keep it, while my 5 quart Dutch oven (yes, also Le Creuset) lives on my stove. It works. Clean-up is easy—sometimes a little soak is needed, but it always comes out clean. Another plus is that it doesn’t require any additional care—no seasoning or immediate drying. It is dishwasher-safe, although I always hand-wash cooking pots. Why hand wash? Two reasons: 1. Big items take up too much needed space in the dishwasher and can interfere with the water spray needed for thorough cleaning. 2. I don’t like what the dishwasher detergent can do to some surfaces. It can cause damage to aluminum and other materials. So, i just don’t want to take a chance with my Le Creuset cookware. Beauty. As with all of the Le Creuset line of cookware, this pot can easily go from the kitchen to the table, or even to the patio or fire pit area. As previously mentioned, it is sturdy and heavy; food will stay hot longer under its hefty lid. It is perfect for taking hot food to a dinner party or potluck meal. 5 qt! It’s HUGE and beautiful. inner diameter is 32~33 cm (13 inch). Lid has a number of 32. Maybe represents 32 cm diameter. My family love it.

My wife and I went back and forth about what size to get. Went to some stores but no one had the 5qt on display to get a feel of how big it really was. So glad we went bigger. I absolutely love this pan! I have wanted one for years and finally got the guts to spend so much on one pan, I can tell you it was well worth every penny. The pan is extremely heavy but large enough to cook for our large family in one pan. I clean it and leave it on the stove as a decorative touch in our kitchen. It cooks everything evenly and is easy to clean. If anything sticks I put a layer of white vinegar and a couple pumps of dish soap and let it soak 5-10 min and everything comes cleanly out of the pan with no effort. ... show more

Beautiful color. Had to buy the knob (size large for 5qt) in order to use in the oven. The color is like an ombre. I haven't used it yet but 5qt seems to be a good size for meal prepping meats for the work week for 1 person. Looks huge on the stove. I know some have mentioned it might not be a legit Le Creuset but this is sold by Amazon, so I trust it. And lastly, I picked the Caribbean color which is more torquise in person than what my camera captured ... show more

My wife wanted a large braiser, for company, but we now pull it out often. It holds heat well, it is spacious, allowing for fewer spills over the side, yet not deep like a saucepan. Fryer, sauces, caseroles, braiser, oven or stovetop, everyday piece of cookware! You could even use this as a griddle for pancakes or grilled cheese sandwiches (I do use my Le Creuset griddle for these). I like a dutch oven for soups, stews and chili, but this braiser is ideal for most other main courses. Mine is used on a glass stovetop (in fact, I use raw cast iron cookware on my glass stovetop). The smooth enamel outside doesn't scratch the stove. It is heavy, but I don't find it cumbersome. Quality and durability is top-notch! The "wonderful" Amazon shipping department boxed my braiser upside down, so it rode across five states that way. All five of the clips that protect the lid from the pan had fallen out. NO CHIPS! Not even a tiny scratch! Cleaning is a snap! Comes clean with minimal effort. I hand wash in hot, soapy, using a sponge with netting over it. Absolutely love it! Worth every penny!
