While most reviewers have gotten the facts straight, others are either reviewing the wrong product or are living on another planet. A few points: *The interior of this pan is ENAMEL, a lot like the working surfaces of your teeth. Do your teeth do a good job for you? Probably yes. Have you ever had something stick to your teeth? Probably yes. *The negative reviewer who said that the nonstick coating was peeling off must be unaware that there is no such coating. *The negative reviewer who said that everything sticks and the pan must need to be re-seasoned is not dealing with an enameled pan. *The negative reviewer who said that bacon would not crisp to the edges must be putting cold bacon into a cold pan, or cooking over a candle. Beyond the cooking surface, a few more points: *The cast iron core takes longer to come up to temperature than other materials, and also retains heat longer. *Cast iron is heavy, which is good for reaching high temperatures, and not so good in any other way. I use this pan often enough to leave it out on the stove, where it looks great. Cleanup is no harder than with any other pan I have. If I've let it sit overnight or longer, I reheat it a bit, wipe out with a paper towel, then let it soak in soap and warm water for an hour or so. It then cleans up with a scrubbing sponge. It's great for searing and cooking meats, and develops a good "fond", or foundation for a pan sauce. I don't use metal utensils in it, or steel pads to clean it. One drawback is that you can't do a chef's flip for smaller foods, because it's too heavy, and the handle is too short for tossing. With the rubber handle cover and the domed glass lid, I also use this pan as a wok and a tagine. It's my go-to choice, and looks great after a year of use. UPDATE JANUARY 2012: Two years now and going strong. I treat this pan with less TLC now than I did when it was new, and it doesn't seem to mind. A few scratches on the bottom, but the interior is perfect. The rubber sheath for the handle is getting looser, and I might need to replace it after a while. * ... show more

  • We love our Fat Fennel Le Creuset 11 3/4 Inch Skillet!
I cannot praise Le Creuset products enough. They are such wonderful cooking tools. This skillet spreads heat evenly & efficiently, the pour spouts are amazing, making pouring simple & with less fuss. A quality product; once you have Le Creuset you won't want anything else. Because of this no-fuss, quality cooking tool, the flavor of the food is really enhanced, tastes as it should. Simple, efficient cooking. Their products do warrant care, so read your care instructions & cooking directions carefully. Since the skillet is cast-iron, it is heavy & you will need to use hot pads for the handle & extra grip, another awesome feature, by the way. Le Creuset uses enamel in just about all of their products, including this skillet (they do have a stainless steel line out now), so avoid using metal cooking utensils as they will scratch away at the enamel. The skillet heats up evenly and does not require as high of heat for the majority of stove-top cooking. This is stated in the booklet & we've found it to be true; the cooking we've done with him has required a lower heat than what we would use with a similar product made from a different material. This type of information and other instructions are in the information booklet that you will receive with your Le Creuset product, so once you read, are aware, & adhere to these, you will have a wonderful skillet for life. Accordingly, Le Creuset has a lifetime guarantee on their products. Not too shabby! Plus, there are so many colors to choose from! We really love our 11 3/4 Fat Fennel (yes, we name our cooking tools;). He is not too blue, not too yellow, but a nice balance of the two: a great green.   • It's a Le Creuset, good start

It's been a while since I cooked in a Le Creuset skillet, and this one reminded me why I liked the old one so much. I've just made one dish so far, pasta with mushroom, bacon and onions, and everything cooked nicely--browned but not burned. I cleaned it with water and a sponge, easy. While the item is described as cast iron and the cooking surface is black, I think it's the body of the pan that's cast iron while the surface is enameled--not just the colored bottom and sides, but also the cooking surface, which looks like cast iron. I had no problem with food sticking, but I did use oil. Also, for cooks who are finding Le Creuset a little heavy these days, well, it's not exactly light, but the little side handle made it manageable. ... show more
