I had no idea how important this beater would become to my collection of accessories. Stainless steel is now my preferred choice for beaters, now that I’ve had the chance to use it. This beater though, worked perfectly for mixing a shortbread crust, or shredding meat pulled out of the slow cooker. I’ve never used this particular style before now and wouldn’t be without it. Makes cutting butter into flour both quick and easy! I had to hunt up instructions online. Cut cold butter into 1 inch chunks, add to flour in the mixer bowl. Run stand mixer (I have a classic KitchenAid) on speed 2 i for 1 to 2 minutes, until butter is in bits no larger than a pea. I then just felt the mixture with my fingers and squashed flat any larger bits of butter (work quickly, you don't want the butter to get warm). While I had my mixer out, I thought I'd go ahead and prep a couple more batches. I now have 3 bags of flour & butter in the fridge, waiting for my next 2 batches of biscuits! You only need this attachment for cutting in butter. Pastry doesn't like to be over-mixed, so you are better off finishing the dough by hand. The proportions that worked for me are 2 cups White Lily Self Rising Flour, 1/2 cup butter, 2/3 cup milk, 2 tablespoons buttermilk powder (optional). After cutting in the butter with this attachment, I stir the milk in with a fork, then pat/roll into a 1/2" thick rectangle and cut into squares. I can't wait to try my hand at pie crust now, and who knows -- croissants may be next! ... show more

Unfortunately this didn't fit my mixer, although I wish it had. The build quality was very good. Can't say anything about how well it worked, had to take one star just cause of ordering and having to return.

Pleased it fits my model of stand mixer! Looking forward to trying with pastry dough. Beater was packaged with a grey plastic dough cutter or scraper for sides of bowl. Also, a starter pastry dough recipe. I bought the stainless steel version which is much heavier than aluminum flat beater that came with mixer. Same width and length for both beaters compared.
