  • A well made pan - but will it last?
Size: 10" Frying Pan Skillet Style: Nonstick
At this point in my life I have purchased more non-stick pans than I can shake a stick at. Within the last couple of years I have purchased granite pans made by Kolex. While they held up well to scratching, the non-stick only lasted about 8 to 10 months with almost daily use. So this time around, and based on some testing by the creator of a You Tube channel called "Project Farm", I have decided to give the Green Pan a try. I have only used this pan a couple of times and it has performed very well so far. It has one of the best non-stick surfaces of any pan I have ever tried. It is a solid well made pan with good weight and nice balance. It also came completely assembled. The handle is securely attached and does not get hot when in use. Time will tell when it comes to durability, but what I have seen so far I like. Buying a Green Pan is somewhat of an experiment for me since I normally do not spend this much for a frying pan. And at this point I cannot really recommend it since I don't know if spending the extra money will be worth it in the long run. Time will tell and I will update my review either when this pan starts to stop being non-stick or has lasted longer than any other pan I have tried....we will see !! WHY THE GREEN PAN Back in the day Teflon was king, but as most people know they eventually start to flake and those flakes can be poisonous. So starting about 10 years ago I made a concerted effort to get pans that were PFOA/PFAS free. However, finding one that is safe but also lasts a long time is not an easy task and contrary to popular belief, and what manufactures will tell you, there are no non-stick pans that last forever...period...end of story. Which is why I normally do not spend this much for a frying pan - they simply do not last. If you want a pan that lasts forever, buy stainless steel or cast iron. The best I have gotten from a non-stick pan has been about a year. Now that is using the pan 4-5 times a week, so take that for what it's worth. The reason I choose this pan is based on the testing of Project Farm mentioned earlier. He designs very unique tests to determine if a product holds up to the manufacturer's claims and how well it does against the competition...great channel and one I highly recommend. While the Green Pan was not the best in every category, it scored the highest in the durability test where a hardness test kit was used to measure the durability of the surface of all the test pans. The Green Pan was the only one to reach level 6...very impressive. Based on my experience, the hardness of the surface makes a huge difference in how long a non-stick pan will last. Some of the pans tested did a little better on some of the non-stick tests, but were very easily scratched. Even though I use mostly wooden or plastic utensils, if a pan's surface is too soft even wood can scratch it. Meaning it will start to flake at some point and even though it might not be toxic, I do not want that in my food. Plus, if the non-stick surface of the pan breaks down, logic dictates food will start to stick. I also took into consideration how I use the pan. While I do use it often for things like making bacon and frying eggs, I also do a lot of stir fry type meals where you would use a wooden spoon to mix and stir the contents, making considerable contact with the non-stick surface. In the last case the hardness of the pan is a key factor versus things like; evenness of heat (difference between hottest and coolest part of pan), and thermal efficiency (how quickly it heats up), which do not really factor in. So my decision to buy the Green Pan, and spend more than I normally do, is based mainly on the durability factor...for me that just makes sense - for you it might not !! ... show more

  • Good reviews are accurate, do buy, but don't use metal utensils
Size: 8" Frying Pan Skillet Style: Nonstick
I got this pan because it was a highly reviewed product though not compatible with induction, which I don't care about for a fry pan. It is super slick and eggs are a breeze with this. It works well with gas. I'd probably buy a while set of these if I didn't already have stainless steel. I just needed these for eggs and such. Do note, this may scratch fairly easy because my father already somehow put 4 marks on it with a metal fork even though I told him not to do that. Don't use anything metal with this thing. ... show more

  • A Sous Chef's Opinion
Size: 8" Frying Pan Skillet Style: Nonstick
I cook for a living, but I also have to cook at home. When my high end nonstick pan recently gave up the ghost after years of service, I decided to replace it with something a bit more affordable. Here are my thoughts after having used it several times: Pros: it's lightweight, which children or people with disabilities may find to be helpful (my old Tri-Ply pan of the same size was quite heavy); it's affordable; the nonstick surface held up relatively well (see note below); it can be put into the dishwasher; it can be put directly from a burner into a hot oven or vice versa; the heat distribution for this pan is acceptable at lower heat (I cooked a PERFECT omelette with no browning whatsoever, but see note below); I've had absolutely NO ISSUES with "sticking" as some other reviewers have had. I suspect the sticking they report is related to improper technique and the heat being much too high for what they're cooking. Cons: because the pan is lightweight while the handle is solid, I couldn't get it to balance properly on the burner when I sauteed a small shallot (this is *absolutely* a safety issue); the product description says metal utensils can be used, but when I gently tapped the side of a Microplane against the edge of the pan to knock out some grated garlic, it left small marks; at higher heat, the heat distribution is somewhat off and resulted in browning that wasn't uniform across the pan. Overall: this is a decent pan, but don't expect to get the performance of something higher end. BE VERY CAREFUL when you're dry heating the pan with nothing in it (which you would do before searing meat) or when using it to toast spices, pine nuts or saute a shallot -- the pan WILL tip. For many people, this will be a "deal breaker," so be warned. ... show more
