Tired of having health concerns over the scratched non-stick pans, I go back to the line of metal woks (I'm Asian), something my mom and generations before her having been using and the metal wok she owns has already served us for decades. This de buyer pan is heavy obviously. For my first seasoning, I wanted to play smart so instead of washing it with hot water, I boiled some water with it directly but that's one of the dumbest things I've ever done. It left ugly marks on the pan so DON'T DO IT. Tried vinegar rub but the marks won't go away. Anyway, that doesn't affect the "non-stick" property of the pan at all. Just remember: Pan's hot, oil in. Oil's hot, food in. And you'll get a pan that stays non-stick forever. ... show more

I have never been excited about a cooking pan but this is an incredibly nice kitchen tool. No I'm not a professional chef, just a father in a household of 10 people and I'm the main cook. I know how to make food taste good and have used a variety of cookware and I really like this pan. Pros: heats up fast, flat bottom sits flat on glass top and gas stove top, maintains steady heat, seasons easily, tall sides Cons: Heavy If you have used cast iron cookware then you will find this somewhat lighter and very familiar to cook with. Made in France, make difference. It is a superior quality compere to those made in China. After having this one, I will never buy another of those cheap one. However, it is heavy so if you want to flip a fried egg, you may need so good technique. It will become black and that is the time it becomes nonstick and free from oxidation. This is one of the best pans that I have ever used. It is comparable to cast iron ones but much lighter. One does not need to worry about scratching the Teflon off but, if seasoned well, it performs like a non-stick pan. Although one has to be careful in cleaning, it is totally worth the trouble to have a pan that performs well suitable for US stovetops yet for real family cooking. ... show more

For many years I have regularly used for several cast iron skillets (mostly Griswold), and was surprised I was not familiar with carbon steel pans. When I learned about this type of cookware I purchases one to try it out and am quite pleased. It hits that sweet spot between cast iron and stainless steel. After getting it seasoned (quite simple) I find it useful for many types of cooking - sautéing, stir-fry, braising and "grilling" steaks. This is the high-side pan that is especially useful when stirring (food stays in the pan). I will be getting a lower-side one as well for cooking other things.   • Wish I bought this 40 years ago.
Nice, strong. Works perfectly on induction top or flame. Even heat. Sides high. Fried chicken. No problem. This and the omelet pan I bought will go to my grand daughter. She loved seasoning them with salt and oil. We then made hash browns with potato skins on. and then cubed potatoes and of course my mom's fried chicken. If I were starting out again I would only buy this pan and the 8 inch omelet pan for my kitchen first before anything else. It truly seems like a legacy in the making. ... show more
