I use it for both keeping the Sourdough Starter at a constant temperature, and for the entire mixing-proofing process. Actually, I mix/measure my flour-salt and Spring Water the night before and keep them with Starter / (measured) Levain all in the box until mixing time the next morning. And keep the mixed / stretched and folded dough in there between manipulations. Winter (with the heat on), I had good luck, but when summer came, and the air conditioning brought the temp down, or worse made it highly variable . . . the final loaves became wildly inconsistent. The Proofing box is really tightening up that slack by keeping everything at 80f. ... show more

I recently purchased this bread proofer from Amazon. It arrived earlier than expected. Thank you! I used it for the first time yesterday to make cardamom bread. I couldn't be happier with the results. The proofer worked exactly as advertised. With the precise temperature control my bread came out the best ever!     • Necessity for sourdough bread making

If you bake real sourdough bread this is a necessity once the weather gets cold. Sourdough needs 80 degrees temperature. Houses are not heated to that temperature and neither the starter nor the bread will rise unlike yeast dough. This appliance is also a slow cooker and yogurt maker. It came today & I used it to rise some sourdough, then again in its baker. Fantastic results! The instruction book is great & there's a nice recipe book included as well. Get it. Don't hesitate. For YEARS I've been struggling with bread, not least because I live at 6,500 ft. I wondered if it was a bit too extravagant but I don't regret it one bit. I had tried using my air fryer but, even with water in the bottom, the air flow dried everything out (and the dry air here is as much of an issue as the altitude). I can't seem to go wrong now I have this proving oven. Half the joy and excitement is from walking by it, looking in the window and seeing it grow, and GROW! You won't regret this. Like others have said, it's a plain, not even airtight box. However, it does the job. I don't like how much counter space it takes up, so I set it up on my washer and leave it on while baking. I usually have a hard time letting the dough proof for the length of time needed and getting the consistency needed. My dough is still a work in process, but this definitely helps to know I am following that part correctly. I do find it very useful but feel that it's overpriced for what it provides. ... show more
