  • The only regret that I have is that I did not make this purchase years ago.
I received my Backwoods Chubby 3400 on February 3 2018. I have waited to write my review so I could see how this smoker performs. I have cooked 5 boston butts, baby back ribs, chicken legs, thighs, boneless thighs and salmon. This smoker has made me a better cook, and increased the number of people coming over to eat. Wow is what I find myself saying after each cook. The smoker is easy to use, and the size is perfect for family use. I love this smoker more and more after every use. If you want the best smoked meats you have ever prepared then you will want a Backwoods smoker. I have cooked on many different types of smokers over the past 20 years. This smoker locks in on the temperature that I want to use and stays there. It makes it easier to put out a consistent product each time. The fire box is designed great. I can add charcoal and wood chunks without losing the heat in the upper chamber. The design of this cooker is great. The heat sink that is created by the water pan keeps food getting dry and helps with temperature control. Jeff Silvers with Smokin' Deal BBQ was great! I could not be happier. He gave me a call before shipping the smoker to see if I had any questions. He was very personable and I will continue to use him as my go-to BBQ guy. I would highly recommend using Smokin' Deal BBQ for any products that you would need for your BBQ needs. The only regret that I have is that I did not make this purchase years ago.   • If you are on the fence, buy it!
Okay, I'm not one to write glowing reviews, usually if I like a product, I'll give it 5 stars and write something along the lines like "item arrived as described. That's all about to change. I am in love with this smoker. I have been using offset smokers for years and left my old one behind when I moved which had me in the market for a new one. Now I can turn out good product on anything you sit me in front of but after using this one, I am ruined. First of all this is the most fuel efficient unit I have ever had the pleasure of using. Less than a half bag of charcoal gave me a good 7 hours of burn time. It heats up fast and stabilizes quickly. It wasn't really marketed as a set it and forget it smoker but for me that is what it is. I'm glad I didn't waste my money on a BBQ guru because I wouldn't need it. Yesterday, I did a dry run and kept walking outside to check for major deviations in temperature...never happened. Today, 5 hours in my inaugural run and the brisket is looking as good as I expected.Did I say I love this thing? Update 5/15/2018 Everything I said above is still true but don't let the water tank run dry. Don't ask me how I know. ... show more

  • Cheap and Overpriced
I have waited for several years to buy a Backwoods smoker for my house, specifically the Chubby. I just retired from the military and have hopefully moved for the last time - so it was time to get my "forever" smoker. This review is for the 3400 model, which is the base model as I understand. This is the second one I have had in the last month, as I had to return the first one. I had read for years about the quality and ingenuity of these smokers, and the amazing results people were able to get using them. I can attest to the design - it is designed very well - and the way it is supposed to function makes perfect sense to me. The problem with this smoker is the materials that it is made from. I have been smoking meat for the past few decades on some type or other of homemade smoker, usually welded together from an old tank or barrel, or the cheapest thing I could find resembling a vertical box smoker from a big box. My smokers were always bare-bones and the only insulation I ever had was using welding blankets to cover the outside. I never had more than $100 in a smoker and maybe another $100 in extraneous "stuff" like welding blankets or tools. I can tell you, I was able to get great results with all of these bare-bones smokers and each performed as well or better than the Chubby...AND the smokers held up a heck of a lot better than this 3400 does. Let me explain: The first chubby I received arrived nicely packaged and intact. I watched the Backwoods video and unboxed and assembled as directed. Once put together I checked the doors to ensure they closed properly and neither latch needed adjustment. I decided to do an initial burn in case there were any residual paint or chemicals left in the box to get them out of there before I cooked for my large family. I started some briquettes in my chimney, and once they were burned down nicely I added a single layer in about half of the tray. My goal was to get the box up to 350-400 and hold it there for 2 hours or so to clean it out. I ran 1/4 pan of water and opened all the vents and chimney, then went inside. When I checked on the smoker 45 minutes later, the temp had spiked over 500 according to the gauge on the front, and there was smoke venting from the center top of the bottom door. The smoke had melted the rubber gasket used as a door seal and was bubbling the paint on the front of the box between the doors. Once we got the coals out and let the 3400 sit and cool down, the heat displacement shield had warped in the box! I couldn't believe what I was seeing! Very disappointed with the quality, especially at this premium price point. I thought maybe I rec'd an outlier so I returned and immediately reordered a second unit. This second unit unfortunately is the same and suffers from many of the same quality issues. I did an initial test burn with 10 briquettes this time and that went off without incident. I used the test burn to check the doors for a good seal and made adjustments as necessary. The following day I decided to smoke a large shoulder and butt to start her maiden voyage. My observations: the 3400 held temperature very well. I was able to keep around 250 consistently for around 9 hours. I like my pork a bit overcooked so I shoot for 200 internal temp using leave-in meat thermometers to measure. I was able to achieve this using just shy of 10lbs of standard (read cheapest) briquettes in about 40-50 degree outside temps. My complaint this time is that upon inspection after cooldown, the charcoal tray and ash pan were warped and had surface rust on them! Again! Additionally, the rubber gasket on the bottom door has another melt spot on it. I began to wonder if the gasket was made from recycled bicycle inner tubes! Very frustrating for smoker that cost this much! I never had any of these issues with cheap or home made smokers that I have used in the last few decades. During the burn we also noticed that the temp gauge on the top door had condensation in it. Very poor quality. Overall i would have to say that this smoker IS NOT worth the money they are asking. You can get the same or better results with a lot less headaches from a smoker that is 1/6th the price. The Good: Holds temp well, and has a unique smoke pattern that uses the double wall construction - very ingenious! Massive water tray! The Bad: Cheap materials! The rubber gasket are not on specification for this use. They need to put a proper fiberglass pyrolytic gasket that can withstand the temps that this box may get up to. Next is the metal used to make the internal lower parts. The heat dissipation plate, the charcoal box, and the ash tray have all warped for me. This is unacceptable! For this money, something more substantial is in order for sure. Last is the exterior paint. It is anathema to me that anything but high temp paint would be used on a smoker. I should not see paint that bubbles from hot steam or smoke. Part of buying something like this is looking over at it while I am outside and ogling the aesthetics of my cool "meat box." Bubbled paint - no bueno... If I had it to do over again, I would maybe research the Backwoods line and figure out if they have better quality with their more expensive smokers. Then again, you are really getting into the realm of the ridiculous for some of those if you are just a "weekender" like me. Not sure cost would be justified - this one was kind of a big deal for our family. I have also just learned that the 3400 is made in China...so...you get the idea. As a retired Soldier this was a big purchase for me, and one that I had been really looking forward to for a lot of years with dreams of being the best pitmaster on my block. My plan now is to save up some more coins and try and find a local welder that has the "smoking bug" like me and have something built that is more substantial for my back yard. The Chubby 3400 is a great idea on paper, but was executed very poorly in reality. With some quality control and better materials, I think this would be a homerun, but for now - I would stay away. ... show more

  • Awesome but here is feedback ....
Overall, the Chubby is an absolute home run. It cooks perfectly and the overall engineering and concept is next level. No questions around quality either. This smoker will take your cooks to the next level. However, there is room for constructive assessment to the vendor and to future buyers who should ensure they get what they paid for. 1. My smoker came with fog in the temperature gauge and has gotten worse over time to the point it has to be read up close. There must be a leak of some sort. 2. My smoker came with the upper door sagging at least 3/4 of an inch (doesn't impact smokes) 3. My smoker's firebox grate is completely bent after two uses and doesn't situate flat in its tray unless it is very hot. 4. When you buy the grease guard/tray, you can't seal the door shut without considerable smoke leaking (could be operator error though). I have mentioned some of the above to Backwoods and they have taken care of me. Please make sure you inspect your smoker extensively before you decide it is what you paid for. All the best!
