I had to do a little research on nitride cast iron pans to really understand what I was getting. Hard nitriding is a process where they “infuse” the metal with other elements to harden the surface and lengthen its life by reducing wear. The nitriding process itself is also something I’m still learning more about in terms of environmental impact and manufacturing standards, and it’s worth noting that some of these industrial processes can involve heavy machinery and emissions that aren’t always clearly explained to consumers. The package says “PFOA & PTFE free,” but to me that doesn’t automatically mean there are no other concerns around reactivity or long term leaching, so this is still something I’m doing my own research on. As for the pan’s performance, it went really well. I seared off some ground lamb for shepherd’s pie and was able to get a nice crust without it sticking. The high sloped walls mean I can fit a little more into it than my traditional cast iron, which will be helpful. It’s definitely lighter weight.   • This is a fantastic pan!
I picked this up because it was advertised as a lightweight cast iron skillet, but after handling and using it, I believe it is actually carbon steel or at least something very similar. That is not necessarily a bad thing, just something worth noting if you are expecting traditional cast iron. I seasoned it using the same process I use for my cast iron skillets. After applying two coats of seasoning and letting the pan cool, I decided to test it with souffle pancakes. I have made this same recipe many times using a standard nonstick pan, so I figured it would be a good comparison. I started with the same temperature and cooking process, but immediately noticed the pancakes were getting darker than usual. I had to turn the heat down significantly to keep the outsides from getting too dark before the inside was fully cooked. Once I adjusted the heat, everything worked out fine. The good news is there were no issues at all with sticking. The pancakes released cleanly, and even a couple of splatters of batter that cooked onto the outer edge of the pan, and got quite dark, wiped away easily with a paper towel and no scrubbing. After cooking, I washed the pan with warm soapy water and it cleaned up without any fuss. So far it has been easy to maintain and behaves very much like a well seasoned carbon steel pan. Overall, this has been a great experience. It heats quickly, cooks evenly once you dial in the temperature, and is noticeably lighter than traditional cast iron, which makes it easier to handle. Quick Facts: MATERIAL: Nitrided cast iron COMPATIBILITY: Induction and oven safe WEIGHT: Lightweight FINISH: Smooth polished surface I ordered this nitrided cast iron skillet because I needed a pan for searing meats that works with induction cooktops. It is a lot lighter than a traditional cast iron pan; additionally, the nitride treatment keeps the surface smooth. I found the texture is very close to a teflon pan, but it has slightly more texture than a non-stick coating. One thing I like is that it heats up on the induction cooktop extremely fast. While the documentation reminds the user to heat the unit gradually, this pan stayed perfectly flat throughout my testing. The handle stays cool during stovetop use, but I found that a potholder is necessary when moving the skillet from the oven. Regarding maintenance, a little soap is okay with these pans; however, I make sure to dry it thoroughly and oil it before storage. I did make a mistake the first time I used it by using sunflower oil on high heat. This resulted in oil that carbonized on the surface. I removed the burnt oil, but it still left a patina on the smooth finish. Even with that staining, the value is good for a high quality skillet.   • Lightweight, Non-stick Cast Iron
This cast iron skillet is definitely lighter than a traditional cast iron skillet, which is nice because I can hold it with one hand and still have a free hand to grab something else. I like that it has a nitrided finish because it is mostly nonstick, easy to clean, and not prone to rusting. It heats up well and cooks evenly, just like a typical cast iron skillet. One time I had the heat too high and cooked my eggs too fast, so they did stick a little. I was able to scrape most of it off with a silicone spatula, and the rest came off easily with a soapy sponge. Very good construction. This thing is solid, but it’s wide enough that you can maneuver it with one hand, which is difficult for me with most cast-iron products. This is a la cast-iron skillet. I think it looks la rather than hammered, but it has excellent heat distribution. The handle is extremely comfortable and oven safe. It doesn’t get hot on the stovetop. This is a great skillet. The nitrided surface is relatively nonstick and healthier than those Teflon type coatings for sure. I don’t know how long the coding will last but by the time it degrades, you will probably have a normally well seasoned cast iron. Comes with instructions on how to care for it. ... show more

  • Nice pan
Pan is sturdy and solid, easy to cook with with oil. I use stainless steel and I use nonstick. I want to eventually move to just steel or cast iron and have been wanting to try one of these smooth cast iron pans to see how they cook. So far I'm seeing the same results to a stainless steel pan, and about the same cooking feats with it. There's always tricks to using these. Like coat in oil and heat up thoroughly before cooking anything in the pan. I've learned using water can work to if you don't want to cook everything in oil. It's a nice looking pan and about as easy to clean as a stainless steel pan. The additive used to help keep this pan a bit more rust resistant is nice to know. I still will be treating this like a regular cast iron pot or pan. Super short soaks, quick soaps. Reoil and heat and make sure no water sits on it. I don't know about the price point on this product, it seemed a little high. But the pan is nice and cooks food well. I think the look is nice, the gunmetal almost looking handle is nice compared to normal steel silver looks. And of course the cast iron black metal look. Kinda looks pretty awesome as a kitchen tool. ... show more
