We had been eying these two cookbooks for ages. After purchasing them as a gift for my spouse, she has not put them down in weeks. I was really debating between this Essential Thomas Keller, and this - the Complete Thomas Keller The Complete Thomas Keller: The French Laundry Cookbook & Bouchon . I am so glad I made the decision I did. (In the end, I did also purchase Bouchon Bakery ). The difference, as you can read, is that **Essential comes with Ad Hoc**, and ++Complete comes with Bouchon++. Ad Hoc is Thomas Keller's accessible, home cook cookbook. Sure, accessible to him is not the same as, say, Rachel Ray, but the recipes are really quite delicious and achievable. Bouchon, on the other hand, is modeled after Keller's accessible restaurant, Bouchon. This was a way to open up quality French bistro-type food without breaking the bank at The French Laundry. So, both compilations have an accessible cookbook, and The French Laundry. For our taste, we found Ad Hoc to be a little better for our needs (the emphasis on family instead of creating French bistro-style food at home). If my wife ever turned up missing, I would need to look for her at The French Laundry. She is enamored with Keller, and his style of writing is superb. He mixes personal anecdotes with recipes, and at the onset says something like "you might find many of these recipes (in the French Laundry) will be out of your reach when you begin. That's ok. Keep at it. We have not watered down our recipes, you have the real thing, and they will take time to perfect. In the meantime, try to make components, side dishes, sauces, and perfect those one at a time." As a home cook, Keller has produced the best fine dining cookbook I have ever seen - challenging you without being haughty. He has a whole area about cooking Foie Gras, and his preference for serving in cool. Here are a few other highlights: (FL) salmon tartar with sweet red onion creme fraiche, puree of english pea soup with white truffle oil and parmesan crisps, parmigiano-reggiano crisps with goat cheese mousse, poached moulard duck foie gras au torchon with pickled cherries, double rib lamb chops with cassoulet of summer beans and rosemary, veal stock, etc. (ah) buttermilk fried chicken, roast cornish game hens, pan-roasted halibut, endive and arugula salad, lamb meatball, creamed baby spinach, pineapple upside down cake, etc. If you are a chef, you need this. As a home cook, you might look at these books and feel they are a little expensive. They are large, coffee table cookbooks. They are worth every penny. Recommend without reservation. ... show more

  • Best Written Cookbooks I've owned.
As others have said, the French Laundry Cookbook is targeted to experienced chefs or those who work in restaurants (or perhaps the very ambitious home cook). Ad Hoc at Home is indeed the more accessible of the two. That being said, this is one of the better purchases I've ever made. Ad Hoc at Home is such a well-written cookbook, it becomes easier to feel motivated to try these recipes out. He delivers his theses, techniques, and perspectives in a non-condescending way. In fact, Thomas Keller has written it in such a way that he feels like he is encouraging us to attempt cooking in a more elevated way. No cookbooks in my collection holds as much validity behind it's words. These are not cookbooks written by food writers, hobbyists, or homemakers. These are written one of the best chefs on the planet. In short, if you're an ambitious soul, I would recommend the set. If you are a hobbyist or simple home cook such as myself, I would recommend Ad Hoc at home alone. However, I do not regret purchasing The French Laundry Cookbook as it contains some very interesting stories and perspectives on ingredients and foods. ... show more

  • Great photos and recipes!
I had been wanting this set for quite some time, but it was $100 for the longest time. I was ecstatic to see that Amazon cut that price in half, so I had to get it. The French Laundry book has a lot of recipes from Thomas Keller's infamous restaurant. Most of these recipes are probably difficult for a normal cook to actually make, partly because a lot of the ingredients are very expensive and not readily available at a typical supermarket. However, the Ad Hoc book has a lot of great recipes that can be made at a normal kitchen. The fried chicken and brownies are amazing! Makes these ASAP when you get the book! Also, this book set was a lot bigger in size and heavier than I had expected. It's really a statement piece in my cookbook collection. ... show more

  • Great recipes, save money from eating out by following these recipes!
So far I have made 5-6 dishes from the Ad Hoc cookbook of this set. And they turned out to be fantastic. A word of caution: you'll need to read at least the recipe at least twice to be better prepared. For example, potato pave would require at least overnight in the fridge to have a better presentation. Other than that, the ingredients are not hard to obtain (no truffles required!!) and the result product is fantastics(at least that's what my significant other told me...) I'm planning to try every single recipe in this Ad Hoc cookbook. As for the French Laundry cookbook -- I have to admit that I haven't tried nor looked at it, but the pictures are surely beautiful! Don't forget to try the herb-crusted lamb, potato pave, leek bread pudding, and the cupcakes! ... show more

I bought these as a Valentine's Day present for my boyfriend who's a chef and not only did we receive it to our door in two days, but it was beautifully gift wrapped. The books are gorgeous filled with colorful pictures and designs which compliment all the great readings. I loved Ad Hoc, it has such a heartwarming feeling and is filled with little stories that show us Keller's philosophy in life and of course in the kitchen. The French Laundry has breathtaking mouthwatering pictures and everything just screams elegance and sophistication, I loved how they emphasize the importance of respecting products above everything and all the little yet significant details that make a product more special, like the story about fish. My boyfriend loved them. I think they're great books to add to a chef's library. ... show more

  • You are what you read.
not only is this a tuteledge of the fine preparation of food, but this is a journey of discovery. Not many cookbooks can be enjoyed in a manner as this one. I sit in my leather, oversized chair that cradles me and read each page as if this were a novel; a novel that takes you on a journey of enlightenment. Imagine the quality of a James Beard, with the skill of a master story teller, like Steinbeck or Vince Flynn! ... show more
