We switched to a full size "drop in" induction cooktop about 6 years ago, and THAT means traditional graniteware pots don't work on induction because it's "enameled tin." Induction ONLY works with pots and pans a magnet will stick to. You can only imagine my joy at having a graniteware "Dutch oven" back in my life again! I call it a Dutch oven because the lid from my old NON-induction graniteware pot fits perfectly! This graniteware is beautifully made and arrives fully assembled (or at least mine did), but mine also included a small phillips screw driver, which makes me think that maybe not all come fully assembled. Or maybe it's included in case you want to use it in the oven? That makes more sense. You don't need to melt the handles off! If you're "into cooking" (and who else would buy one of these?) this is a perfect size for making Julia Child's beef Burguignon (Google it), or boiling down your own REAL chicken "bone broth." For those of you too young to know any better, REAL "bone broth" turns to Chicken or Beef Jell-O when refrigerated! In other words, if you can pour it from a box, it AIN'T bone broth! So here's what you can do: Fill this pot with two or three pounds of "bone on, skin on" chicken wings or feet and a half onion, sliced. Cover with water, do not add salt, and simmer on low heat with a lid on for about an hour. Strain through a collander lined with culinary cheese cloth or a super-fine sieve, season to taste with salt and store in glass jars in the refrigerator. Or if you dont mind cloudy broth, any strainer will do. You can cool the chicken, pick out all the bones and cartilage (skin optional), then pack the chicken tightly in a mold and refrigerate. Sliced, it will make great "jellied chicken" sandwiches! I am SOOOO grateful to have my graniteware pot back! And just for the record, even though my copper pots and pans don't work on induction, converting to it cut my electric bill enough that the cooktop paid for itself in a couple of years. How'that for eco-friendly! :-) YAY for induction graniteware! *****FIVE GRANITE STARS*****

I did not expect to love this pan as much as I do. It is as beautiful as it is well-made. I’ve never cooked with granite cookware, but now I’m seriously considering buying the whole set. I tried it out by cooking a few eggs in the pan with only the tiniest amount of bacon fat (maybe 1/4 tsp). They cooked up beautifully in about 3 minutes. No difficulty flipping them and they slid right out of the pan when ready to serve. Cleanup was a breeze, too. I stuck the pan under the cold water while waiting for it to warm up to add dish soap. Before the water was even warm, the pan was already clean! I just wiped it with a sponge and that was it. I’ve since used it to heat up leftover steak. No oil, just stuck it in the pan for about 3 minutes. Perfectly heated but the meat didn’t get tough the way it sometimes does when you reheat steak. Also used it to saute some garlic and onions in butter. Same deal. No sticking, no burning, food came out perfectly cooked. Today’s adventure is going to be a grilled cheese. If you’ve seen these pans around but you've been hesitant to try yet another kitchen trend, do it! You won’t regret it. Easy to use, easy to clean, nice to look at. What more could you want in a pan? I will add one very minor caveat – I wish there were use and care instructions included with this pan. I had to look on the “other” brand’s website to see how to treat it. A tip on there said to only use it on medium or medium-low heat, so I’ll have to stick with my trusty cast iron for searing steaks and things like that. Also found out they are not dishwasher safe. That info would definitely be helpful to know when purchasing this pan. All that aside, I love this pan so much, I still had to give it 5 stars!
