It offers an abundance of possibilities. Care instructions for cast iron: 1. Wash with warm water. Add a mild soap, if desired. 2. Dry thoroughly with a lint-free cloth or paper towel. 3. Oil the surface of the pan with a very light layer of cooking oil while warm. Hang or store the cookware in a dry place. The American-based company Lodge has been fine-tuning its construction of rugged, cast-iron cookware for more than a century. No other metal is as long- lasting and works as well for spreading and retaining heat evenly during cooking. Lodge's Logic line of cookware comes factory pre-seasoned with the company's vegetable oil formula, and is ready to use right out of the box.   • where have you been all my life?
If you're the type to throw pans in the dishwasher, stop reading this and just don't buy cast iron. ... Still with me? Good. Like so many others, I've listened to the hype and wasted so much money on non-stick pans that don't brown and never last long, even with hand-washing and using plastic utensils. Now I understand that cast iron is the best, most durable non-stick there is and it's not hard to maintain it. Lodge is well made and inexpensive and although it comes pre-seasoned, it's not non-stick, yet. You'll want to lightly clean it then smear fat or crisco (I used duck fat but bacon fat is good too) and wipe the excess with a paper towel. Then place it in an oven that's preheated as hot as it gets (500F if you can) for 10-15 minutes (an hour is fine but overkill). Put your fan on b/c it will stink. Repeat this now and then after cooking, especially the first few times, and these repeats can be high flame stove-top, not oven, if you prefer. Don't bother with the handle or outside unless rusty - this is really about the inside. After a few times, it will be soooo smooth! If you don't season it after cleaning, at least dry it on the stove for a few minutes so it doesn't rust. If you thought about sanding to get it smooth, DON'T as that will make the seasoning NOT stick to the pan and you'll ruin it. It actually needs those tiny bumps for the seasoning to stick and you'll forget those bumps ever existed very quickly once the seasoning builds. As far as extras go: get the silicone handle (don't bake with it), get the plastic scraper (no need for the chain mail if you keep it well seasoned), and it's ok to use a bit of palmolive or similar & water to clean if especially dirty but then be sure to dry well and/or season after. ... show more

This is exactly what I had been hoping for. It is big enough for my boyfriend's an my omelette and cleans easily with water and a scrubby sponge. I had been using the smaller size for many years because I was just on my own.   • Really fine skillets
I have a 12", 16" skillets, a 10" flat frying pan and a rectangular griddle, all Lodge. I also have a 12" skillet by another mfg. I have had for at least thirty years, It took a few years to become perfectly seasoned but I still prefer my Lodge. After just a few weeks they are superbly seasoned. I ordered a 9" skillet just a few minute ago primarily for making gravies. I'm writing this review because I just read some of the negative reviews and found some based on people not knowing how to cook with cast iron and others due to not understanding the nature of cast iron. As far as learning to cook with it goes, it just takes a bit of practice while paying attention to how things cook in cast iron. It is not rocket science so if you patiently stay with it, you will learn to love it. Nothing cooks as well, heats as evenly or browns as well. As far as pots go, I prefer the enamel coated cast iron - a la La Cruset. The Chinese make these at a fraction of the cost and they are fine. The Chinese haven't got the steel making thing down but their cast iron seems quite adequate. Another complaint involves cracks and breakage. Cast iron is a bit fragile compared to other metals so if you receive a cracked one, just replace it. It is just the nature of the beast. Personally, I've never had this problem. Sticking - these are not non stick pans in the teflon sense but I find they stick less than other non non stick pans. Sometimes, things are going to stick, When that happens, I just put a couple of inches of water in the pan and put it to boil for a few minutes and whatever is stuck releases making clean up a breeze. When I fry eggs, I use non stick spray (after the skillet is hot) and then add some butter before adding the eggs and they slide around just like they would on teflon. My other cookware is All Clad and though enormously more expensive, I still prefer the cast iron for frying. Even though Lodge says they are non stick right out of the box or nearly so, I find it improves with use. If you look at reviews of various brands and types of cookware on cooking related sites, you will find cast iron ranks at or very near the top. Cast iron cookware gets passed down generations and I've never heard of any other cookware rating that - except perhaps biscuit pans which somehow gain mystical reputations. Cast iron does cook a good biscuit by the way. I hope this helps with your decision. It is inexpensive so just give it a go. If you don't like it, you can always use it to hit people or hold a door open - it is a bit heavy. ... show more
