I recently purchased the GE Café induction cooktop and needed compatible pots/pans, and GE was offering a free Hestan Cue Smart Pan with the cooktop purchase. I wasn't familiar with the Hestan brand, nor have I ever owned/used stainless steel cookware, but after doing some research, I decided to purchase the ProBond series for our daily cooking. The set is *beautiful*! And HEAVY! I'm not a great cook, but I need to tell you—the past week of using these pots/pans, and I feel like cooking has been fun! Everything has cooked evenly and cleanup is quick (the pots/pans are dishwasher safe, but I like to handwash them using a nylon sponge and Dawn) No water spots after hand drying. I cook Weight Watcher meals, so not much oil and butter is used—again, everything has cooked up perfectly. The only thing that does NOT cook nicely in stainless steel (and this is true for any stainless steel cookware, not just Hesan) are eggs, and that's because it's high-liquid meat, which is prone to sticking on the metal, so you do want to get a non-stick pan for eggs. (Hestan does offer non-stick versions.) My only concern is how heavy the pots/pans are—the weight has made it difficult to balance and pour contents out using just one hand (while the other hand is using a spoon/spatula to help guide the food onto the plate). That's probably a *me* thing, as I've only ever used inexpensive cookware, which tends to be lightweight. Overall, I would recommend the ProBond series! ... show more

Size: Frying Pan (8.5-Inch)
This is the smallest stainless steel pan I have at 8.5 inches, but at $140 at present, it's by far the most expensive (my other two are 10 inches, Amazon brand, around $30, and 12 inches, Misen, around $75). While the quality and performance generally justify a higher price, there are definitely some things to keep in mind, both positive and negative. 1. It retains heat incredibly well. It's great for searing smaller pieces of meat or caramelizing veggies. 2. If you use it right, it has a very good level of non-stick. If it's preheated and oiled, it's as non-stick as just about whatever non-stick pan you may use or a well-seasoned cast iron skillet. I've made small omelets, eggs, pancakes, etc. in this, and I have no trouble with sticking (but I stress, that's only if you pre-heat it well and oil it). 3. It has discolored considerably. The manufacturers provide some guidance for keeping it looking pristine, but actually, this one has discolored more than other stainless pans I have in a shorter amount of time. I've taken the same care of it as I have my other stainless pans. I suspect it might be from lots of high-heat cooking, but I'm not sure. I don't really care that it doesn't look pristine, because the performance is good. If you care about whether it'll retain its appearance, this may not be the best one for you. 4. It's really pricey. Plain and simple. You can get great quality stainless cookware for less. This is a great pan, but I can't quite justify the price. Overall, I really like this. It performs well and I use it at least several times a week if not more. So in that way, if money is no issue, I can recommend it. If you're budget minded like most consumers, I would say that you can find something else very good for a lot less. ***I write reviews as a hobby because I love trying out electronics, clothing, household products, kitchen devices, and more. I so love these pans. They are beautifully made, heat up faster than my old pans and are perfectly balanced. Unbalanced pans can really hurt my wrists so the Heston pans being so nicely balanced means a lot to me. But you have to be aware that with shorter handles, if cooking for longer time or hotter temps, a pot holder maybe necessary. I was pleasantly surprised how easy it was to seer my steaks without sticking. They came out perfectly. I have not tested in the oven yet. I hand-washed the pan rather than dishwasher and found it very easy to clean with minimal need for heavy scrubbing. The look and feel of this product is very nice. If you are fixing a soup or chili that all works great if the pan is covered with moisture. If you are frying an egg, sautéing onions, even when making pancakes…there was a horrible mess to clean, it took a long time to clean, and wasn't able to get them fully clean. We followed instructions of using proper oils and temperature. The pancakes were low-low/medium and it was the worst of all. I was shocked….did not expect this from this product. I have returned it and expecting a full refund. I’m guessing the newer brand Nano doesn’t have these problems but is more than twice the price. ... show more

    • Handles get dangerously hot!

I really wanted to love these pans. My old set suffered from aluminum corrosion in the dishwasher, leaving sharp stainless steel edges that I was frequently cutting myself on, so I was looking for a brand with sealed rims that would be truly dishwasher safe. While I have no doubt the Hestan pans met that criteria, I was not counting on the handles getting burning hot. They were untouchably hot even past the protective bump on the bottom that is supposed to keep your hand from getting too close to the body of the pot. The handles are also very short compared to competitors. For this price point, they should have a better handle design that stays cool. ... show more
