These things come out of the box very sharp and have performed very well so far on everything I've thrown at them, veggies, meats, potatoes. I love the knives I purchased..finally I can cut through tomato skin! My problem is I read in product description that the country of origin is India. I can live with that. However, the box says made in China! I avoid like the plague buying products from China. I've had Henckels steak knives since 1979 and I still love them!
