    • Fantastic cooking performance and good non-stick coating - but buy a melamine sponge

I was hesitant to buy these at first given reviews here and from other pro cooking sites talking about how ceramic pans tend to start out non-stick but lose it over time. At first, I found the same was true - for the first few months, they were super non-stick - eggs practically flew around the pan. But slowly, things started sticking more - especially eggs. But then I did something amazing - I read the FAQ on the Web site. :-) And it has a simple tip - if things start sticking, use a simple melamine sponge, wipe it several times with hot water. IT WORKS. Using a simple, cheap melamine sponge about once every week or two, depending on what we've used the pan for that week, keeps it very non-stick. Otherwise, we just wash it with soap and water normally. GreenPan - include a melamine sponge with every pan AND put a note about this in the box! This is an amazing tip and will avoid the negative reviews some leave. Pros * Great cooking performance - good browning, good balance of heat sensitivity and performance * Easy clean up * Very non stick (don't forget the melamine sponge) - I found that I needed to use the melamine sponge more (e.g. once a week) when cooking at higher heats or with stickier foods and less (every 1-3 weeks) when just using it frequently for things like eggs * Look great * Grill pan is great - has now replaced our beloved Griddler for most things * Nice, sturdy, well-fitting lids * Good price for what you get - good looking, ceramic non-stick pans with good browning * Have been using the fry pan for 6 months and it's still non-stick and going strong * Great handles - comfy and oven-safe * Oven safe Cons * They don't recommend very high heat. Not too much of a con given how well this sautes and browns at medium-high heat * Somewhat sensitive to heat changes - this is a good or bad thing depending on what you're cooking. Sometimes I prefer a pan with a thicker bottom and slower reaction, other times something with faster reaction like these is great. * Doesn't include a melamine sponge or directions in the box to use it periodically - in just my experience, this is necessary to keep the pans and the cook happy. ... show more

Buying new pans these days pushes you down all kinds of rabbit holes - reviews by experts, Amazon users, staring at specifications for pan thickness and dishwasher and oven safety (and at what temperature). After 2 months of use, I can say that these are great pans. They have good weight, the handles do not get hot when cooking, and many of the lids are interchangeable. One does get a bit scared when oils or lemon juice blackens at the bottom of a pan, but the black part comes right off when following the instructions for cleaning. The non-stick coating is doing just fine (and despite some of the comments of other users, the pans do not chip easily - I wonder if they are reviewing the same pans!). Buying the special sponges is a good idea - they are essentially for proper cleaning. I look forward to using these pans for years to come. ... show more

They say that people really do read reviews. I agree as I am one of those people. I also write reviews, not for every product, but definitely for those products that warrant a review. Green Pans Valencia series is one such product. I purchased these pans and pots to replace two other sets of non-stick we have. One is an original Emeril Lagasse set from 2004. Shows how good those pans were. The other a Gotham Steel Copper set from 2018, not so good. I felt it was time for a unified looking set and I had just watched America's Test Kitchen review cookware. They're top pick for non-stick was the Green Pan Valencia series. Consumer Reports rated them very highly as well. I had a simple set of Green Pans shortly after they came out on the market in 2013 in the second home we had. Our youngest son has them now, so I was already familiar with the brand. It was the Gotham Stell ones that replaced those pans. But as I noted, they weren't as good as the Green Pans or The Emeril set. So, when Amazon had a sale on the Green Pans, I pulled the trigger. We've had the pans now for a couple of weeks and followed the pre-use instructions. First, they got a light wash. Then, on their first use they were heated on a medium heat for a minute or two before any oil was added. By adding oil, I mean a tablespoon or less. To date they have been wipe out clean after frying. Just like on TV. They are very substantive in the hands, but not heavy. They heat evenly and there is no noted running of liquids or oils to one side or the other showing the pans are flat. They are rated for all types of cooking surfaces, but we have electric and have noted the setting of the stove is a little lower on all burners, indicative of a good thorough heating material. I hope to get a couple of decades out of this set. But I do note, my wife kept a couple of the small 8 inch Emeril pans for eggs. ... show more

It's been over a year now of almost daily/weekly cooking with these. They are fantastic. They heat up extremely quick and I have not had a problem with cleaning them at all. I once had some stuff get way over cooked and stuck, but using the supplied polishing pad (same exact thing as a "Magic Sponge") cleaned it up with minimal elbow grease. No need to let these "soak" in the sink to break stuff up. If you leave it on the stove dirty for a week, the stuff rinses right off and cleans up perfect with a soapy sponge. I read about people having issues with how it was packaged, but it seems the manufacture fixed the issue, as mine cam extremely well packaged and protected with numerous layers of extra cardboard and every item had it's own foam wrap. My only issue is I wish they made the lips of all the bowls and pans rimmed with a radius to prevent them from chipping so easily. The thin lips and squared edges promotes chips. If it was rimmed/thicker lips with a smooth radius they wouldn't chip as easily. Mind you, there's very few chips but they exist and I suspect over the years will get worse. ... show more
