  • Top quality fry pan; easy to clean; heats evenly

I’ve ordered Caraway pots and pans before, so I know that they are an excellent brand of quality-made pots and pans. This 5-ply stainless steel fry pan is no different. As soon as you take the pan from the package, you realize from the weight, the solid build, and the well-attached handle that Caraway has again designed a wonderful piece of cookware. Stainless steel is one of the safest materials you can buy for cooking because it doesn’t have a non-stick coating made of Who-knows-what material. With a little care it is also pretty much resistant to everyday scratches. The best stainless-steel pans have about 18% chromium and 10% nickel in stainless steel (18/10). I searched the Amazon page and on the manufacturer’s website and could not find the specs on this. However, I did the “magnetism test” on this pan (does a magnet stick to it?) – and it passed – a magnet does indeed stick tightly to the bottom of the pan indicating, I think, that there's not too much nickel in it. I’ve mostly been using it to cook fried eggs for breakfast and it does a great job of heating quickly and distributing the heat across the pain. You don’t need much oil (the classy little booklet that is included with the pan states that “Add 1 tablespoon of oil into your pan to coat the surface. Allow 1 minute to preheat before adding food.” Note that this pan is described as “agnostic.” That term has nothing to do with religion when used to describe a fry pan. It means that it is suitable for any kind of heat source - gas, electric, or induction cooktop. I have a small induction plate in the basement bar area so I will be able to use this pan there. Cleaning this pan is very easy. Be sure to read the well-crafted “Instructions” card that is included. Using the included soft scouring pad, I was able to clean the pan in a matter of minutes. And there were no lingering ugly residue or scratches - see photo of how the pan looks after cooking & cleaning - (I bought a similar pan a few weeks ago and after the first use it looks old, dull, and has splotches of various colors). Use very little veggie oil, start on low heat, let the pan cool for a bit after use, and cleaning will be a breeze! Important: Review the product page on Amazon for important information on how to cook with stainless steel and, just as importantly, how to clean and care for these products. This is a great fry pan that heats up quickly and distributes heat evenly across the pan. I’ve had tremendous experience with Caraway pans before, and they are extremely reliable, durable, and a joy to cook with.   • Really excellent fry pan. Heat the pan FIRST before adding food! Hot pan = easy cleaning

The key to making sure things don't stick is to make sure your pan and oil/butter is sufficiently hot before adding your proteins. If you add everything and start heating, sticking is almost a guarantee. I'm guessing that most of the people who complained about sticking are not getting their oil to 300-400ºF before putting in their protein. A friend of mine added the chicken thighs to the pan before it was hot, and I exclaimed "NOOOOOO!" like Luke Skywalker exclaims when Darth Vader says he is his father. Get the oil and pan hot first, then put in your protein laying it down close to you and setting it down away from you. The heat will sear the outside of the protein and quickly prevent it from sticking. You'll still develop some of that delicious fond you can deglaze with later, but PLEASE get your pan and oil HOT FIRST! I had ZERO issues sauteing off some chicken breasts with sticking. Got the pan to at least 350ºF and a light smoke and shimmering from the oil before adding the chicken. The most I had to clean was some of the oil that had gently burnt on the edges. Hot water and soap and a sponge took care of it. I'm really happy with the performance here, and will consider Caraway over some other more expensive brands based on my experience. ... show more

  • Way too difficult to clean

I used this for the first time this past weekend. I made stuffed chicken breasts (which I started stove top and finished in the oven). Compared to any other frying pan I've owned, this is clearly a professional pan. It, unfortunately, is very heavy. Top that with three stuffed chicken breasts and I felt like I was holding a 25 lb. barbell. I like the size as it came in handy with the large chicken breasts. They browned evenly so there was no issue with heat distribution. The handle stayed cool while stove top and became extremely hot once put in the oven. I expected this. Since there is no non-stick coating, I had to use lots of olive oil and butter when cooking. The meat would still stick to the pan anyway. Now, my biggest gripe is how hard this pan is to clean. I get that it is a top quality pan that I'm sure many professional chefs use. For me, however, that means absolutely nothing when I have to soak this pan for hours just to clean it. I put in more work cleaning the pan than I did cleaning, seasoning and brining the chicken. I know Caraway is a good brand, but I don't think I can use their cooking pans without the non-stick coating. I've never had this coating peel off of my pans so I think I'm good with that. ... show more

  • You have to know how to properly use it - may be a learning curve!

With any quality stainless steel pan, you have to learn how to use it properly. It is truly non-stick if you ensure you heat the pan long enough before use - otherwise you will be stuck with a sticky mess. The people leaving bad reviews clearly don’t know how to read or follow instructions. You also have to ensure that you never add salt to the pan before it’s hot. It’s best to wait until the end of cooking otherwise it can leave pit marks in the steel. It’s actually very easy to clean if you use it properly. There can be a small learning curve, as you can see from my photos. Even though I’m experienced with stainless, I didn’t heat the pan long enough the first time I used it. I was attempting to make fried rice out of soggy old brown rice and it stuck really bad. The last picture shows how it looked just after soaking it. I haven’t had this problem since, as I make sure to heat it a little longer than I think it needs (if you splash water on it, it should bounce around on the pan). Pro tip: If you want to get stainless really clean, the trick is to use Bon Ami (it’s a product that can be purchased for very cheap). Overall this is a very nice pan. I would love an even larger size with a lid (this one does not come with a lid)! ... show more
