It’s a well balanced, if you can say that about a small knife, I use a large santoku sort of knife for almost all duties, I do have a serrated French knife for bread, a fine Narrow Japanese knife for fish , but when you are opening a chili to remove the seeds for instance, this serves very well. It is beautifully made and reasonably priced, I can see nothing not to like here. For my birthday I decided I wanted a new chef knife, so I started shopping and researching. I had decided to get myself a great, professional, German steel, and had chosen one at about 3x the price. Well, before buying I mentioned this to a friend who is currently attending cooking school and he suggested I check this one out. So I did. I ended up getting this full-tang, German steel knife and wow - I couldn't be happier. Blade is REMARKABLE at this price point - the thick steel holds an Edge like crazy, even after I've modified the angle to 17° (SHARP sharp). The balance is out of this world. I don't much care about the handle material but this Olive wood is gorgeous. The shape of the handle fits my medium size male hands perfectly and I feel like I have surgical control when cutting both meat and veggies. It feels like it will last forever in my hands. A nice knife for the price, although did get one that had a problem with the handle that we exchanged. Looks good for the price and the edge has held up pretty well. Nice for slicing vegetables and general cutting. Wood handles look and feel good in the hand.
