I wish there were more stars! This pot conducts heat evenly and becomes more than hot enough for searing on an induction burner without any fears of overheating the non-stick surface. The instructions do say to use a medium/high heat for searing and to lower the heat as soon as possible. I certainly didn't need high and my burner, which has 9 power settings didn't have to go above 7 with the temp at about 320. Last night I tried hamburgers and they seared very well, so well and so quickly, that I actually overcooked them to an inside temp of medium because I wasn't prepared for this kind of heat transfer. Tonight I was more delicate with scallops. I had them on 8 and a temp of 300 for about 30 seconds before they were clearly seared and I had to lower the power to about 5 and cover them for a few minutes to be sure they were cooked. And they were beautifully seared. You're told to oil the pan fully before first use, which I did. They also prefer that you use a little bit of oil when searing, but also say that if you're careful with how hot the pan gets, you can use it with no additional oil. I haven't tried that. They recommend oiling the pan "every so often" but it is not a must and it is not very frequently. It washed up easily from both cooking/searing experiments in warm water, a soft sponge and a little dish detergent. Then you must dry it right away to avoid rust. Like everything else about this pan, cleanup is easy, it practically dries itself and it is not too heavy for someone with weak wrists to maneuver.   • Worth the money

I love this pan. I hate that is was so expensive, but I guess you get what you pay for. We make lots of eggs in my house all week long. But when you are making breakfast in a rush at three different times trying to get three kids out the door to school at different times, you don't always have the time you need to properly heat your pan or make sure you don't scald your butter. So with our other pans, we frequently ended up with eggs stuck to the bottom of the pan or scalded butter that turned the eggs brown. Those problems are over. We have used this pan for about two weeks, on a daily basis, and it is perfect for scrambled eggs, fried eggs, and omelets. The nonstick cooking surface is bonded to the pan and does not look like a coating. Basically, this looks to be an extremely high quality and safe nonstick pan. My advice to others who may be thinking about this pan is to spend the extra money. If you use it properly it should last for years. And what I mean by this is don't use metal utensils or spatulas on the surface even if the directions say this is OK, and also let the pan cool down before putting it in or under water. Unless you are using 100% stainless steel pans, any pan made with more than one layer will eventually age if you are putting a hot pan immediately into water where it cools suddenly. ... show more

  • Excellent pan, but understand what you're getting...
Style: Old Style
This is an excellent fry pan. It has a nice heft to it, heats up very evenly and the handle stays cool to the grip even during long cooking sessions. The nonstick performance is outstanding, as you'd expect from a quality PTFE-based coating (more on that later). The coating extends up over the sides and down to the base plate on the bottom of the pan, which is not coated. In most cases, cleanup involves nothing more than a quick wipe-down with paper towels. Occasionally, food will bake onto the steel rivets, requiring a few minutes of soak time before the wipe-down, but that's nothing more than a minor annoyance. You may be surprised to learn that this pan (like all of Le Creuset's "nonstick" cookware) has a PTFE-based fluoropolymer coating (think "Teflon"). This is a fact that Le Creuset seems careful to avoid advertising since "Teflon" and "PTFE" have become such taboo words in the cookware industry as of late. This coating can potentially break down and release dangerous fumes and toxic particles at extreme temperatures, which is one of the reasons why manufacturers recommend using only Medium heat on the stove-top and never exceeding 500° F in the oven. As long as you keep these pans below 500° F, they are perfectly safe. It's even safe to ingest any of the coating that may peel or flake off into your food. The danger only comes from overheating the PTFE and then breathing in the fumes. Do your reasearch, understand your equipment, learn to recognize the fear-mongering from legitimate facts, and make an informed decision about what you think is best for YOU. Personally, I'll always have at least one PTFE-based pan in my kitchen; the nonstick performance just can't be touched by anything else. ... show more

  • Worth the Price

These days, I would rather have five expensive but high-quality, long-lasting cooking accessories than a kitchen full of cheap, low-quality stuff. After purchasing three or so cheap non-stick pans and watching them all give out on me after only a few months of heavy use, I finally decided to bite the bullet and buy myself a quality non-stick pan. After much research, the Le Creuset 9-1/2 inch non-stick fry pan is what I chose. By far, it is the most heavily used item in my kitchen, and it still works as well as the day it arrived on my doorstep. Its non-stick properties function so well, I've found that dry, caked-on scrambled egg residue rinses off with just a little warm water. And even though I use it repeatedly for breakfast, lunch and dinner, it remains virtually scratch-free. For those who can sacrifice the money, I would definitely recommend it. And, at the rate that cheap non-stick pans wear out, it's probably a better long-term investment anyway. ... show more
