I was looking for an inexpensive but still decent set of knives that I could travel with, as I sometimes prepare meals for family gatherings. (I like having my own, as know they are sharpened to my liking.) This pair of knives fit the bill. With a standard size (8") chef's and a 6" utility, this covers 95% of my prep needs. Construction: The blades are a good quality mono-steel (type?) with no imperfections. It's not mentioned anywhere if the blades are forged or stamped, but for the price I would guess the latter. What makes me wonder though is that the spine of the blades are sufficiently thick (not like a cheap restaurant steak knife) and have integral tangs and bolsters. Either way, the blade steel is solid and stout where it needs to be. The blade surfaces are ground to an even bevel with a clean matte sheen. The edges are honed to fine slicing profile. I wouldn't wail on them as choppers, but that's not what they're meant for anyway. The handles are a kind of rubber molded around the tangs. The molding has a nice swell in the middle for a comfortable grip. Performance: I tested these on several foods while making salsa. The chef's easily sliced firm onions, and glided through soft tomatoes without mashing or snagging. Actually, for the tomatoes I let the blade do all the work and just slid it through with minimal pressure. The curved profile was also the right form for rocking while chopping cilantro. The utility performed equally well and its more pointed profile was well suited for coring the tomatoes and peppers, as well as slicing out the pepper membranes. Throughout all of this, the contoured handles were comfortable and caused no hand fatigue. And with the integral bolsters on both ends of the tang, the blades are nicely balanced to also ease fatigue. The included double-sided sharpener is a nice bonus. It has ceramic stones set in a V, and different courses per side. Though which is fine vs course isn't labeled that I could see, looking at the stones themselves I could tell. The one disappointment that I had was that these didn't come in presentable gift box like I expected. I may have misinterpreted the description. They came black outer cardboard box with an inner plain box. The blades were just in cardboard sleeve covers and plastic bags, and were loose in the box. Even just a cardboard cutout insert to keep things in place would've been nicer. Conclusion: These aren't going to replace my pricier forged blades in my home kitchen, but they will definitely do the job when I'm away. For the price, they are solid, balanced, and hold a nice edge. And are comfortable enough for extended use. With good care and use, I could see these blades lasting.
