Global G29 18cm Meat/Fish Stainless Steel Slicer. This knife has an extra wide blade, making it ideal for slicing off the heavy peels on some fruits and vegetables. Also great for breaking down meat and fish. Loved by professional chefs around the world, Global knives are an excellent choice for the serious home cook. The thin and razor sharp Global blade allows the cook to cleanly slice through foods, preserving the integrity of the ingredient and maximizing its flavor. The majority of Global knives are ground to a straight point rather than the western style of beveling the edge. To balance their knives Global uses a hollow handle that is filled with just the right amount of sand to create the correct balance. The handle has its own unique darkened dimples for a non-slip grip. Because the knives are very light weight they reduce hand fatigue. Global knives have a smooth contour and seamless, all stainless construction that eliminates food and dirt traps. Global knifes are forged in Japan from CROMOVA 18 Stainless Steel, a blend of 18-percent chromium for good stain resistance plus molybdenum and vanadium which gives excellent edge retention.

I brought this knife because it looks like a deba knife and I'm a fan of shokugeki no Soma so 5 stars for that. I used already a global g2 so I'm already familiar with the behaviour of the steel itself. It has a very sharp edge which is good. The downside is that you need to align the edge with a honing steel quite often because it has much more softer steel than vg10 but the upside is that it doesn't chip just bend so a honing regularly does the job. ... show more

This is my go-to knife, and I'd be lost without it. I can't imagine life before this knife. It's beautiful, first off. It's the kind of knife you want to display proudly on your wall. But it is when you get to work that this knife really shines. It cuts anything, and it cuts it well. And unlike every other cheaper knife I've owned, it holds its edge and never stops. VERY SHARP, BUT I HAVE BEEN TOLD IT IS NOT AS HARD AS A 58-62 ROCKWELL CUTTING KNIFE AND THEREFORE IT WILL NEED TO BE SHARPENED SLIGHTLY MORE OFTEN, I GUESS, BUT WE DO NOT USE IT THAT MUCH SO IT IS A BETTER CHOICE BECAUSE OF THE STEEL'S RESISTANCE OF THIS KNIFE TO RUST/CORRODE/ETC.
